Cheddar Bacon Potato Packets

Ingredients

  • 4 med potatoes, cut into 1 in cubes
  • 4 tbsp. butter
  • 2 c shredded cheddar cheese
  • 1 c cooked & crumbled bacon
  • salt and pepper to taste

Preparation

Step 1

1. Preheat grill to medium heat. Tear off 4 large squares of foil. (If it's not non stick spray with cooking spray.)

2. Place cubed potatoes no each of the foil squares. Add 1 tbsp. butter to each pile of potatoes. Sprinkle with salt & pepper to taste.

3. Cover potatoes with abt 1/2 c shredded cheese and 1/4 c bacon pieces.

4. wrap foil securely around potatoes. pierce foil with a knife to vent steam.

5. Place on grill cook over med heat for abt 45-60 min until potatoes are tender.

** Can also be made in the oven. Place packets on baking sheet in 375 degree oven for about 45 min or until tender.
