CORNISH HENS WITH ORANGE RICE

A lengthy, special occasion dish. You can substitute any desser wine for the
Sauternes.

Ingredients

  • 6 1 1/4 Ib Cornish hens
  • 1/2 cup butter or margarine, melted 3 tbs cornstarch
  • 1 2/3 cups Sauternes
  • 1 cup orange juice
  • 1/2 tsp salt
  • 1 10 oz. jar apple jelly Orange rice (below)
  • Brown Cornish hens all over in butter in a large deep skillet over medium high heat; remove hens, and place in a greased roasting pan. Add cornstarch to drippings in skillet, blending well. Add apple
  • Pour 1/2 cup sauce over Cornish hens in roasting pan; bake, uncovered at 350 for 1 hour and 10 minutes, basting often.
  • Serve hens with remaining sauce.
  • ORANGE RICE
  • Ingredients 2 cups diced celery w/leaves
  • 1/2 cup chopped onion
  • 1/2 cup butter or margarine, melted
  • 2 cups water
  • 1 tsp salt
  • 1 tbs grated orange rind
  • 1 cup fresh orange juice
  • 1 1/2 cups uncooked long-grain rice

Preparation

Step 1

Saute celery and onion in butter in a large saucepan over medium heat 5 minutes or until tender. Add water, salt, orange rind and orange juice. Bring to a boil. Add rice; cover, reduce heat and simmer 20 minutes or until liquid is absorbed and rice is tender.
Makes 6 cups
