CORNISH HENS WITH ORANGE RICE

A lengthy, special occasion dish. You can substitute any desser wine for the
Sauternes.

Ingredients
- 6 1 1/4 Ib Cornish hens
- 1/2 cup butter or margarine, melted 3 tbs cornstarch
- 1 2/3 cups Sauternes
- 1 cup orange juice
- 1/2 tsp salt
- 1 10 oz. jar apple jelly Orange rice (below)
- Brown Cornish hens all over in butter in a large deep skillet over medium high heat; remove hens, and place in a greased roasting pan. Add cornstarch to drippings in skillet, blending well. Add apple
- Pour 1/2 cup sauce over Cornish hens in roasting pan; bake, uncovered at 350 for 1 hour and 10 minutes, basting often.
- Serve hens with remaining sauce.
- ORANGE RICE
- Ingredients 2 cups diced celery w/leaves
- 1/2 cup chopped onion
- 1/2 cup butter or margarine, melted
- 2 cups water
- 1 tsp salt
- 1 tbs grated orange rind
- 1 cup fresh orange juice
- 1 1/2 cups uncooked long-grain rice

Step 1
Saute celery and onion in butter in a large saucepan over medium heat 5 minutes or until tender. Add water, salt, orange rind and orange juice. Bring to a boil. Add rice; cover, reduce heat and simmer 20 minutes or until liquid is absorbed and rice is tender.
