Ingredients

  • 1

    lb. Roma tomatos, chopped

  • 1

    Cucumber, sliced and quartered

  • 1/2

    med. red onion, sliced

  • 2

    avocados, diced

  • 2

    Tbsp. virgin olive oil

  • juice of 1 lemon (about 2 Tbsp.)

  • 1/4

    c. cilantro, chopped

  • 1

    tsp. sea salt

  • 1/8

    tsp. pepper

Directions

Place chopped tomatos, sliced cucumbers, sliced red onion, diced avocado and chopped cilantro into a large bowl. Drizzle with olive oil and lemon juice. Toss gently to combine. Just before serving, toss with salt and pepper.
