3 Onion Roasted Potatoes

  • 2 lbs of russets or any other potato you like (Baby, Yukon, etc.) peeled if desired
  • Oil
  • Salt and Pepper
  • 6 halved and sliced shallots
  • 4 cloves garlic
  • 4 Green onions



Step 1

Preheat oven to 450F Rinse and pat dry. Toss with oil and salt and pepper Place potatoes in a single layer on a sided baking sheet or roasting pan and roast for 15 minutes. Loosen them from the bottom and add shallots and garlic. Roast 20 to 30 minutes until golden brown. Sprinkle with green onions.
