"Chorizo" Sweet Potato Skillet

  • 1 Tbls. olive oil
  • 1 medium sweet potato, peeled and diced small
  • 1 (10-12 oz.) pkg. chorizo flavored seitan
  • 1 15 oz. can black beans
  • 1/2 cup uncooked brown rice
  • 1 can fire-roasted diced tomatoes
  • 1 cup veggie broth
  • 1 cup shredded Mexican cheese
  • Scallions (optional)



Step 1

Prepare rice first according to package directions. Saute diced sweet potato in skillet with oil over medium heat for about 5 minutes, or until potato has softened about 1/2way through. Add chorizo and brown. Rinse and drain black beans. Add beans, cooked rice, tomatoes and stir. Add broth and stir. Allow to boil and then simmer on low, covered, about 30 mins. Turn off heat, add cheese, re-cover until cheese has melted. Serve, topping with scallions if desired.
