Spaghetti Squash with Bacon, spinach and goat cheeze

Ingredients

  • 1 medium spaghetti squash,
  • I split my in half remove seeds and cook mine in the microwave until done
  • to save time
  • 1 Tbs olive oil
  • kosher sale freshly ground pepper
  • 6 slices of bacon, I used 1/2 lb
  • 1 Tbl red wine vinegar
  • 1 TBs maple syrup
  • 1 8 oz bag of spinach
  • 2 oz of crumbled goat cheeze

Preparation

Step 1

heat a large skillet over med heat add bacon and cook till crisp.
If you cut the bacon into bite size pieces it is
much easier.
add vinegar stir to deglaze the pan
Turn heat to low add maple syrup add spinach a hand full at a time stir
add spaghetti squash that had been shreded. mix well
add goat cheeze just to combine
