Broccoli with Bacon

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1/4 lb thinly sliced bacon, cut into 3/4 inch pieces
  • 1 medium head broccoli,cut into florets, stems peeled and cut into 1 inch pieces
  • 1 small spanish onion, thinly sliced
  • pinch red pepper flakes
  • 1 tsp sea salt
  • juice of 1/2 lemon

Step 1

Heat the oil in a pot over medium high heat until it shimmers. Add the bacon and cook, stirring and scraping frequently, just until the edges are browned and crispy. 2 to 3 mins. Use a slotted spoon to transfer the bacon to a bowl, leaving the fat behind.
Add the broccoli, stir well, and top with onions. Cook, without stirring, until the broccoli begins to brown a bit, about 3mins: then cook, stirring frequently until the onions are tender and slightly browned, about 3mins more.
Reduce the heat to medium-low and add the pepper flakes and reserved bacon. Cook, stirring occasionally, for about 5mins. Season with salt and cook about 5mins more, until the broccoli stems are fully tender and have a slight bite. Transfer to a plate and squeeze the lemon juice on top. Serve immediately
