Bacon-Ranch Potato Salad

Ingredients
- 15-16 medium red potatoes
- 2 cups mayonnaise
- 1/2 cup chopped green onion
- 1 envelope ranch dressing mix
- 1 pound bacon (cooked and crumbled)

Preparation
Step 1
Place potatoes in large pot and cover with water. Boil 20-25 minutes, or until tender. Drain, then run cold water over potatoes. Once potatoes are cooled, cut into cubes. In a large bowl, combine mayonnaise, green onions and ranch mix. Gently stir in potatoes. Cover and refrigerate at least 3 hours. Just before serving, stir in crumbled bacon.
