Ingredients
- 1 lb small red potatoes (6-8)
- 3 TBS butter, cubed
- 1 1/2 TBS lemon juice
- 1/2 tsp salt
- 1/2 tsp grated lemon peel
- 1 TBS minced fresh parsley
- Salt and pepper to taste

Preparation
Step 1
1. Peel a strip from around each potato. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat, cover and cook for 15-20 minutes or just until tender.
2. Meanwhile, in small saucepan, melt butter. Stir in the lemon juice, salt, lemon peel, salt, and pepper. Drain potatoes and place in a serving bowl.
3. Pour butter mixture over potatoes; toss gently to coat. Sprinkle with parsley.
Makes 2 servings. Each serving = 8 Weight Watchers points.
