Ingredients

  • 1 med. Yukon Gold potato
  • 1/2 C. celery, chopped
  • 1/4 C. onion, chopped
  • 2 C. corn
  • 1 C. sweet red pepper, diced
  • 4 oz. Canadian-style bacon, diced
  • 2 C. milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. hot pepper sauce

Preparation

Step 1

1. Cook potato (about 8 min. in microwave). Allow to cool; peel and mash.

2. Meanwhile, coat large saucepan with cooking spray. Add celery, onion, corn, and red pepper; saute over mid-high heat, stirring frequently, for 5 min.

3. Stir bacon and milk into saucepan; stir in mashed potato and mix well. Season with salt, pepper, and pepper sauce; stir to combine. Cover and simmer 10 min. (Do not allow to boil)
