Sliced Beef with Lemony Arugula Salad

Ingredients
- 1/4 C + 2 T olive oil
- 1 T chopped garlic
- 2 t chopped rosemary
- Four 3/4" sliced of beef tenderloin, pounded to 1/2" thick
- 2 t mayonnaise
- 2 t lemon juice
- 1 t grated lemon peel
- Kosher salt & pepper
- 5 oz. arugula
- 1 c very thinly sliced mushrooms
- 1/4 lb Parmesan cheese, shaved

Step 1
In shallow dish, mix 1/4 C olive oil with garlic & rosemary. Add meat & turn to coat.
In small bowl, whisk mayonnaise, lemon juice, lemon zest & remaining 2 t olive oil. Season with salt & pepper.
Grill meat til nicely browned, 30 sec. per side. Transfer to plates & top with arugula & mushrooms & parmesan shavings. Drizzle with dressing.
