Ingredients

  • MARINADE:
  • 2 pounds uncooked large shrimp shelled, cleaned
  • Fresh pineapple cut 1" chunks
  • 1 large onion cubed
  • 1 cup pineapple juice
  • 1/4 cup olive oil
  • Juice of 2 fresh limes
  • Fresh dill
  • Salt to taste
  • Freshly-ground black pepper to taste
  • SAUCE:
  • 1/2 cup Southern Comfort
  • 2 cups orange marmalade
  • 1/2 cup pineapple juice
  • 2 teaspoons hot sauce
  • 1 tablespoon minced jalapeño pepper
  • 1 teaspoon finely-minced fresh ginger
  • Juice of 2 fresh lemons
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly-ground black pepper

Preparation

Step 1

Place shrimp in marinade and leave for at least 1/2 hour.

Alternate shrimp on skewers with chunks of fresh pineapple and cubed onion. Grill until the shrimp turns pink and is firm to the touch.

Sauce: Combine all ingredients. Warm sauce over medium heat; cool prior to serving. (May be prepared in advance and refrigerated.)
