Mango Jicama & Black Bean Salsa

Ingredients

  • 1 1/2 C diced mango
  • 3/4 C diced jicama
  • 3/4 C drained black beans
  • 1 t finely chopped jalapeño
  • 2 t finely chopped mint
  • 1/3 C finely chopped red onion
  • 2 t lime juice
  • 2 t rice vinegar
  • Kosher salt

Preparation

Step 1

In food processor, puree 1/2 C of diced mango until smooth. In serving bowl, combine remaining diced mango, jicama, beans, jalapeño, mint, onion, lime juice & vinegar. Gently stir in mango puree & 1/2 t salt. Let stand 20 min. before serving.
