Ingredients

  • Dressing:
  • 1 10 oz. pkg. frozen peas, thawed (You can use fresh peas also)
  • 1/2 lb. medium(fresh or frozen)raw shrimp, shelled and deveined
  • 4 oz. fresh mushrooms, sliced
  • 1/4 c. onion, sliced
  • 4 oz. china boy lo mein noodles(break in half)
  • 2 large cloves, minced garlic
  • 6 T. teriyaki sauce
  • 2 T sesame oil
  • 1/4 c. red wine vinegar

Preparation

Step 1

Prepare dressing by combining all dressing items and mix well.
Boil noodles until tender, 3-4 minutes. Do not overcook. Rinse, drain well, chill.
Line plate with lettuce leave, place chilled noodles on lettuce, top with peas, shrimp, mushrooms and onions.
Pour dressing over salad. Garnish with shredded carrot, redish or cucumber if desired.
