Ingredients

  • 1 cup green bell pepper strips
  • 1 cup yellow bell pepper strips
  • 1 cup fat-free, no-salt-added spaghetti sauce
  • 1 (8-ounce) can no-salt-added tomato sauce
  • 1 package of italian sausage (hot, or mild your choice)
  • 1/2 cup water
  • 1 teaspoon dried Italian seasoning
  • 4 garlic cloves, minced
  • 6 (1-inch-thick) slices French bread, toasted
  • Hot sauce (optional)

Preparation

Step 1

Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add sausage, onion, and bell peppers; saute 10 minutes. Add spaghetti sauce and next 4 ingredients; bring to a boil. Reduce heat; simmer, uncovered, 10 minutes. Spoon sausage mixture evenly over bread slices. Sprinkle with hot sauce, if desired. Yield: 6 servings.
