Peachy Keen Cream Cheese Bars

This recipe is adapted from "Mia407" on "Just a Pinch". The simplicity of this dessert is that you use Yellow Cake Mix and canned peaches. I wanted to use fresh peaches (okay, I didn't have canned peaches to begin with). It's a perfect dessert to bring to a potluck, because it's pretty easy to put together. It's got a punch of sweet, though!
Ingredients
- 1 1 1 package yellow dry cake mix-white
- 1/3 1/3 1/3 cups butter, room temperature
- 2 2 2 large eggs, divided
- 8 8 8 ounces cream cheese, room temperature
- 1/3 1/3 1/3 cup sugar
- 1 1 1 teaspoon pure vanilla extract

Preparation
Step 1
Preheat oven to 350°F.
Spray a 9x13-inch pan with nonstick cooking spray.
In a large bowl combine cake mix, butter and 1 egg; mix with fork just until crumbly. Set aside 1 1/2 cups crumbs for topping.
Press the remaining crumbs on bottom of prepared pan; Bake 10 minutes.
Cut peach slices into 1-inch pieces; Spoon onto partially-baked crust.
In a large bowl, combine cream cheese, sugar, 1 egg and vanilla extract; beat with mixer until creamy. Spread over top of peaches.
Sprinkle with reserved crumbs; Bake 30 minutes.
Chill at least 30 minutes before serving; Serves 12.
Store leftovers in refrigerator.
