  • 1/2 cup butter, softened
  • 2/3 cup sugar
  • 1/4 cup honey
  • 2 eggs
  • 1 cup flour
  • 1 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 3/4 cup canned corn kernels, optional

Preparation

Step 1

Preheat oven to 400°F. Grease or line 12 muffin cups with non-stick cooking spray.

In a medium mixing bowl, whisk butter and sugar with a whisker. Then, add honey and eggs, mix until blended. Mix in flour, cornmeal, baking powder and salt, blend thoroughly. Stir in milk, sour cream and corn kernels, until just blended.

Spoon batter into prepared muffin cups. Bake for 20 to 25 minutes until golden brown.
