Pork Loin with Lemon, Garlic and Thyme

  • 2 lemons, quartered
  • 4 garlic cloves, crushed
  • 1/2 c olive oil
  • 8 thyme sprigs
  • 1/2 t kosher salt
  • 1/2 t pepper
  • 1 (2pound) pork loin roast


Servings 6


Step 1

Place first 6 ingredients in gallon zip lock bagand squeeze to combine. Add roast, seal bag and rub bag to blend flavors. Chill 3-4hrs, turning occasionally.

Preheatoven to 400*.Remove roast from marinade,discard marinade. Place roast in 13x9x2 pan.

bake uncovered 30min. Cover and bake 15 additional min. Let stand 10min before slicing
