BULGUR PILAF

1. Heat oil in large frying pan
- 4 tablespoons oil
- 2 onions, finely chopped
- 2 cups bulgur
- 4 cups chicken broth, hot
- 3 teaspoons pine nuts (pignolia), toasted (optional)
Bulgur Stew with White Beans

Heat oil in a large pot over medium-high heat
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, finely chopped (about 1 1/2 cups)
- 2/3 cup bulgur
- 3/4 teaspoon red-pepper flakes
- Coarse salt and freshly ground pepper
- 2 teaspoons sweet paprika
- 1 can (28 ounces) diced plum tomatoes
- 2 cups water
- 1 can (14.5 ounces) gigante or cannellini beans, drained and rinsed
- 5 ounces baby spinach (about 5 cups)
- 3 1/2 ounces feta cheese (about 2/3 cup), plus more for garnish
- 1 tablespoon fresh oregano leaves, plus more for garnish
CILANTRO PESTO

Combine ingredients into chopper with oil, lemon juice salt and pepper until well mixed
- 6 cloves garlic
- 1 bunch parsley
- 1 bunch cilantro
- 2 tablespoons pine nuts
- 4 tablespoons olive oil
- juice of 1/2 lemon
- 1/4 tea sea salt
- freshly ground black pepper
LEMON HERB SAUCE FOR SALMON

Combine shallots, vinegar, wine and lemon in a sauce pan and cook on high heat until almost all the liquid is gone
- 1 tablespoon shallot or yellow onion, minced
- 2 tablespoons white wine vinegar
- 1 1/2 tablespoons white wine
- 1 1/2 tablespoons lemon juice
- 1/2 cup heavy cream
- 1 cup 2 sticks butter, room temp
- 1/2 teaspoon dilll
- 1/2 teaspoon thyme
- 1/2 teaspoon parsley (dried)

PERSIAN RICE

Soak 3 or move cups of plain rice in salted cold water
- 3 cups rice
- 1 small potato, sliced
- 1 stick butter
BLACK BEAN SALSA

Combine all ingredients in a large bowl
- 2 15 oz, can Black beans, rinsed and drained
- 1 17 oz. can whole kernel corn drained
- 2 large tomatoes, seeded and chopped
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon salt
- 1/2 tablespoon black pepper
- 2 jalapeno peppers, chopped
MAYO FOR SANDWICHES OR TUNA

Combine mayo, cilantro, lime zest and juice, cumin, salt and pepper together in a small bowl
- 1/4 cup Mayonnaise
- 2 tablespoons cilantro, chopped
- 1/2 teaspoon lime zest
- 1/2 teaspoon cumin
- 1/8 teaspoon cayenne
- 2 teaspoons fresh lime juice
PESTO

Combine first 4 ingredients into blender & slowley add olive oil
- 2 cups Basil
- 2 cloves garlic
- 4 tablespoons Pine nuts toasted
- 4 tablespoons Parmesan cheese
- 1 cup olive oil
BLACK BEANS WITH PEPPERS AND CUMIN VINAIGRETTE

Combine salt, vinegar, garlic, cumin, hot pepper sauce, cilantro and olive oil in a small bowl
- 1 1/4 cups Black beans
- 1/2 teaspoon salt
- 1 tablespoon Red wine vinegar
- 1 clove garlic, Minced
- 1/4 teaspoon Cumin
- 1 teaspoon Hot pepper sauce
- 1 tablespoon cilantro, chopped
- 1/2 red and green bell peppers, diced
- 1 red onion, diced
EECH (ARMENIAN SIDE DISH)

Saute chopped peppers, chopped onion in 1/2 cup oil
- 1 onion, chopped
- 1/2 c. oil
- 1 (8 oz.) can tomato sauce
- 1 can water
- 2-3 lemons
- Salt, pepper, paprika
- 1 c. (#1) fine "bulgur" (cracked wheat)
- 1 red pepper, chopped
- 1 green pepper, chopped
- Parsley
