Coat a large nonstick skillet with cooking spray, warm pan over medium-high heat
- 2 sprays cooking spray
- 2 large eggs, lightly beaten
- 1 cup uncooked carrot, shredded
- 1 cup uncooked scallions, sliced, divided
- 3 cups cooked white rice
- 1/2 cup frozen green peas, thawed
- 1/4 cup low-sodium soy sauce, or to taste
Cheesy Spaghetti Pie

Mix the cooled spaghetti, grated cheeses and eggs together in a large bowl
- 1 pound cooked spaghetti, cooled
- 1/2 cup grated Parmesan
- 1/2 cup grated pecorino
- 1/2 cup grated Swiss
- 4 eggs

- 2 tablespoons olive oil
