Nordstroms Tomato Basil Soup

1. In a large, heavy saucepan, heat the olive oil over medium-high heat until shimmering
- 6 tablespoons olive oil
- 4 large carrots, peeled and diced
- 1 large onion, sliced
- 1 tablespoon dried basil, crushed
- 3 28-ounce cans whole peeled Roma tomatoes
- 1 quart chicken broth
- 1 pint heavy cream
- Salt and pepper to taste
BLACK BEAN AND SALSA BURGERS

1. Mash together allowing some chunks 4 patties 3" wide, 1/2 inch thick
- 1 Can black beans, Rinsed
- 1/3 cup red onion, chopped fine
- 3 cloves garlic, mashed
- 1/4 cup Panko
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/4 teaspoon salt
- SALSA
- 1 large beefsteak tomato, seeded and chopped
- 1/4 cup red onion, chopped fine
- 1 tablespoon lime juice
- 1 teaspoon olive oil
- 2 tablespoons cilentro
- salt to taste
CHICK PEA SALAD WITH COTTAGE CHEESE

Mix all ingredients together use as many tomatoes as desired, add salt and pepper
- 1 can chick peas, drained
- 1 container cottage cheese
- 1 large tomato, chopped fine
- 1 teaspoon lemon juice
- 1 teaspoon cayenne
GAZPACHO

Roughly chop the cucumbers, peppers, tomatoes and onions into 1 inch cubes
- 1 cucumber (halved and seeded, not peeled
- 2 red peppers, cored and seeded
- 4 plum tomato
- 1 red onion
- 3 cloves garlic, minced
- 3 cups tomato juice or V8 Hot and spicy
- 1/4 cup white wine vinegar
- 1/4 cup olive oil
- 1/2 teaspoon kosher salt
- 1 teaspoon black pepper
POOR MAN'S CRAB CAKES

Grate 2 cups unpeeled zucchini
- 2 c. grated zucchini
- 2 eggs
- 1 c. seasoned bread crumbs
- 1 tbsp. mayonnaise or salad dressing
- 1 tbsp. Old Bay seasoning
- 2 tbsp. grated onions
WEIGHT WATCHERS CAKE

Preheat oven to 350 degrees Combine all ingredients in a large bowl
- 1 18.25oz box moist style cake mix (devils food)
- 1 cup fat free plain Greek yogurt
- 1 cup water

- 1 French Baguette
- 2 tomatoes, finely diced
- 2 cloves garlic, finely chopped

- 2 LARGE ZUCCHINI, ENDS REMOVED
- 1 CUP CHERRY TOMATOES, HALVED
- 1/2 CUP CRUMBLED REDUCED-FAT FETA CHEESE
- 1/3 CUP FINELY CHOPPED RED ONION
- 2 TBSP FAT-FREE ITALIAN DRESSING
OVEN FRIED CHICKEN TENDERS

In a large sealable container or plastic bag, combine buttermilk (or yogurt) with paprika and mix well
- 1/3 cup reduced fat buttermilk or yogurt
- 1/8 teaspoon paprika
- 12 oz. raw boneless skinless lean chicken breast tenders (about 10 pieces)
- 1/3 cup Fiber One bran cereal (original)
- 1/3 cup panko breadcrumbs (like the kind by Progresso)
- 1 tablespoon dry onion soup mix

- 1 package active dry yeast

- 1/4 cup crisco
