LEMON HERB SAUCE FOR SALMON

Ingredients
- 1 tablespoon shallot or yellow onion, minced
- 2 tablespoons white wine vinegar
- 1 1/2 tablespoons white wine
- 1 1/2 tablespoons lemon juice
- 1/2 cup heavy cream
- 1 cup 2 sticks butter, room temp
- 1/2 teaspoon dilll
- 1/2 teaspoon thyme
- 1/2 teaspoon parsley (dried)

Preparation
Step 1
Combine shallots, vinegar, wine and lemon in a sauce pan and cook on high heat until almost all the liquid is gone. Add cream and simmer over medium heat until sauce has reduced and slightly thickened. Remove from heat, set aside and cool for a few min. Just before serving, whisk small amounts of butter in at a time, to the wam liquid. Season with salt and pepper serve immediately
