LENTIL SOUP

Boil lentils for 10 minutes, strain & rinse w/water
- 1 cup brown lentils
- 1 medium onion
- 3 cloves garlic
- 1/2 can tomato paste
- 1/4 cup parsley, chopped

Spray bundt pan w/Pam. Melt 1 stick butter and combine w/sugar and cinnamon

- 1/2 cup pecan, chopped

- 3/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/3 cup raisin

Cover potatoes w/water just to top of potatoes, add salt and pepper cook approximately 30 minutes add scallions and

- 2 Bunches of Scallions
- 1/2 pint Whipping cream
BIG GREEN OMELETTE WW

Bring a medium sized skillet (with lid) sprayed with nonstick spray to medium heat
- 1 cup sliced mushrooms
- 1/2 tsp chopped garlic
- 1 cup frozen cut green beans
- 2 cups chopped spinach leaves
- 1 wedge Laughing Cow cheese
- 3/4 cup egg substitute
- optional toppings: salsa verde, fat free sour cream
Chickpea, Avocado, & Feta Salad

You only need 5 minutes to make this healthy salad!
- 1 can chickpeas, rinsed and drained
- 2 avocados, pitted, and chopped
- 1/3 cup chopped cilantro
- 2 tablespoons green onion
- 1/3 cup feta cheese
- Juice of 1 lime
- Salt and black pepper, to taste
CRUNCHY NOODLE SALAD

1. Bring a large pot of salted water to a boil
- 1/2 pound thin spaghetti
- 1 pound sugar snap peas
- 1 cup vegetable oil
- 1/4 cup rice vinegar
- 1/3 cup soy sauce
- 3 tablespoons dark sesame oil
- 1 tablespoon honey
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons sesame seed , toasted
- 1/2 cup smooth peanut butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 red bell pepper, thinly sliced
- 4 scallions, sliced diagonally
- 1 tablespoon sesame seeds, toasted
- 3 tablespoons fresh parsley, chopped
ZUCCHINI BREAD

Preheat oven 350 degrees. Mix together first 6 ingredients, then add last 5 ingredients
- 3 eggs, beaten
- 2 1/4 cups sugar
- 1 cup oil
- 3 cups zucchini, peeled and grated
- 1 cup walnuts
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 teaspoons cinnamon
- 1/4 teaspoon baking powder
RED LENTIL SOUP

Wash lentils and boil in water, water should cover all ingredients by 4 inches
- 1 cup red lentil
- 1 large onion, chopped fine
- 1/4 cup rice
- salt/pepper/cumin
- 2 chicken boullon cubes
LEBNI DIP

Mix all ingredients together and enjoy
