Chopped Parsley Salad

In food processor pule parsley, onion, garlic to paste
- 2 cups chopped flat leaf parsley
- 1 large oion finely chopped
- 2 grlic cloves
- 2 cups coarsely hopped dried breadcrumbs
- 1/2-1 cup extra virgin olive oil
- juice of 1 lemon
- 2-3 tbsp. red wine vinegar
- salt and pepper to taste
Slow-Cookin Pulled Chicken

Place all ingredients except the chicken in the crock pot
- 1 1/2 lb. raw boneless skinless lean chicken breasts, halved
- 1 cup canned tomato sauce
- 1/2 cup ketchup
- 2 tbsp. plus 2 tsp brown sugar (not packed)
- 2 tbsp. plus 2 tsp cider vinegar
- 2 tsp. garlic powder
- optional: red pepper flakes to taste

Mix all ingredients together put on flour tortilla or pita bread
- Preheat oven 400
- 1 lb ground/beef/chicken/turkey
- 1 med red onion finely chopped
- 1 med red pepper finely chopped
- 1/2 green pepper finely chopped
- 1/2 bunch parsely finely chopped
- 1 15oz can diced tomatoes
- 2 tbls. red tomato paste
- 1 1/2 tea mint (dried)
- 1 tbl paprika
- dash chili pepper
- 1-2 tbl. flour
- 2 cloves garlic crushed
- 1 1/2 tea salt
Spinach Parmesan Balls

Directions Preheat the oven to 350 degrees F
- 1 pound package frozen chopped spinach, thawed
- 5 eggs
- 1 large onion, minced
- 10 tablespoons margarine, melted
- 1 cup shredded Parmesan
- 2 garlic cloves, minced
- 1/2 teaspoon dried thyme leaves
- 1/2 teaspoon cayenne
- 1 3/4 cups Italian-style bread crumbs

- 3/4 cup mayo
- 3 garlic cloves chopped fine
- 2 1/2 tbls lemon juice.
Roasted Garlic and Red Bell Pepper Dip

- 2 red bell peppers
- 1/4 cup Roasted Garlic, recipe follows
- 1/2 pound feta cheese, drained
- 1/4 cup, plus 1 teaspoon extra-virgin olive oil
- 2 teaspoons fresh lemon juice
- 3 tablespoons chopped fresh basil
- 1 teaspoon chopped fresh oregano
- 1/4 teaspoon red pepper flakes, or to taste
- 2 teaspoons chopped fresh parsley, garnish
- Pita chips, recipe follows
- 2 heads garlic, upper quarter removed
- 2 teaspoons olive oil
- Salt
- Ground black pepper
- 6 pitas
- 1 1/2 teaspoons garlic powder
- 2 teaspoons kosher salt
- Pinch cayenne
- 1 1/2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 2 tablespoons olive oil
CANNELLINI BEAN SALAD WITH PARSLEY PESTO

1. Place the beans in a colander and rinse under cold running water
- 2 15 ounce cannelini beans
- 3 tablespoons plus 1/3 cup olive oil
- 1/4 cup yellow onions, minced
- 3 teaspoons garlic, minced
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- pinch of cayenne
- 1/3 cup parmesan cheese
- 1 1/2 cups parsley
- toasted pita bread triangles
Cinnamon-Roasted Almonds

- 1 egg white or 2 tbls liquid egg whites
- 1 teaspoon cold water
- 4 cups whole almonds
- 1/2 cup white sugar
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
