PINWHEEL APPETIZER

WITH HAND MIXER COMBINE CREAM CHEESE/MAY/CHEDDAR
- 1 8OZ PKG CREAM CHEESE
- 8 TBLS MAYO
- 4 TABLSPOONS CHOPPED PIMIENTO
- 2 CUPS GRATED CHEDDAR
- TORTILLAS
- 1/2 LB SLICED DELI HAM
WEIGHT WATCHERS EGG ROLLS

1. Preheat oven to 400F 2
- 1 1/4 cups cooked lean ham, finely diced
- 1/2 cup low fat Swiss cheese, finely chopped
- 1 tablespoon scallion
- 8 egg roll wrappers
- 1/4 cup honey mustard
CANNELLI BEAN SALAD

1. Combine onions, sage, parsley, oil, vinegar and salt in food processor and process until smooth
- 3 tablespoons chopped onions
- 2 fresh sage leaves
- 1/2 cup chopped parsley
- 1/3 cup extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon salt
- 3 cups cannellini beans (canned okay)
- salt and pepper to taste
MUSSELS IN LEMON BUTTER

1. Rinse mussels and let drain
- 2 dozen fresh mussels, whole
- 1/2 cup white wine
- Juice from 1 fresh lemon
- 4 cloves garlic, minced
- 1 small onion, thinly sliced

COLD CUCUMBER SOUP

1. Combine all ingredients in a large bowl
- 3 Cucumbers, peeled seeded & coarsely chopped
- 1 yellow bell pepper, seeds removed, coarsely chopped
- 2 green onion, chopped
- 1 jalapeno pepper, minced
- 2 tablespoons cilantro, finely chopped
- 1 tablespoon fresh mint, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon EMeril's essence (recipe in separate area)
- 1 teaspoon salt
- 1/2 teaspoon cayenne
- 1 1/2 cups plain yogurt
- 1 cup sour cream
- 1 1/2 tablespoons extra virgin olive oil
- 1 teaspoon white wine vinegar
SHRIMP SALAD

TOSS SHRIMP WITH LIME JUICE IN A LARGE GLASS MIXING BOWL
- 3 CUPS SALAD SHRIMP THAWED RINSED
- 1/2 CUP FRESH LIME JUICE (1-2)LIMES
- 1/2 TSP EACH SALT AND PEPPER
- 1/2 CUP OLIVE OIL
- 1 RED ONION FINELY CHOPPED
- 1 GREEN PEPPER FINELY CHOPPED
- 1 CUP FRESH CILANTRO, CHOPPED
- 2-3 VINE RIPE TOMATOES 1/2" DICE
- 1-2 JALAPENOS CHOPPED
- 2 HAAS AVOCADOS
WEIGHT WATCHERS GUACAMOLE

1. Optional: chopped cilantro, chopped jarred jalapenos, additional salt and pepper
- 15 ounces can early/young peas, drained
- 1/2 cup mashed avocado (1 medium small)
- 1/3 cup chopped cherry or grape tomatoes
- 1/4 cup finely chopped onions
- 1/4 cup fat-free Greek yogurt
- 4 teaspoons lime juice
- 1/2 teaspoon chopped garlic
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon cumin
- 1/8 teaspoon chilli powder
ZUCCHINI WALNUT DIP

Saute zucchini with olive oil for 5 min
- 2 medium zucchini grated
- 5 tbsp olive oil
- 2 tbsp flour
- 4 walnuts finely chopped
- 1/2 cup strained yogurt
- 2 garlic cloves
- salt pepper
- GARNISH
- olive oil
- 1/2 cup red pepper flakes
- dill chopped
CEASAR SALAD DRESSING

Mix all ingredients together and put on salad
- 2 Tablespoons fat-free yogurt, greek style
- 1/2 clove garlic
- 1 teaspoon dijon mustard
- 1 teaspoon vinegar, malt vinegar
- 1 tablespoon olive oil
- salt and pepper
CORN CHOWDER

Take corn off ear. Saute onion and red pepper till limp
- 3 ears Fresh Corn
- 1 Red pepper, cut up
- 1 Onion, chopped
- Dash of cayenne
- 1 cup Half and half
