SPICY EGYPTIAN LENTIL SOUP(GREEN LENTILS)

Place a large saucepan over medium-high heat, and heat the oil

- 1 large carrot, diced
- 1 large baking potato, peeled and diced

- 1 pound Ziti pasta/Rigatoni

- 2 teaspoons Italian seasoning

- 1 15-ounce container part skim Ricotta cheese
- 2/3 cup part skim Mozzarella grated
- 1/4 cup grated Parmesian cheese

Thoroughly combine potatoes, garlic, olive oil, yogurt, salt and pepper then place on a platter
- 2 cups mashed potatoes ( 2 baking potatoes will do)

- 4 cloves garlic
- 1 onion, chopped
- 4 tablespoons parsley, chopped
