Tuna Wraps Tex Mex Style

Combine tuna, bell pepper, scallions, salsa, and cilantro in a bowl
- 1 6oz can solid white tuna packed in water, drained, and flaked
- 1/2 c finely chopped yellow bell pepper
- 2 scallions, thinlyl sliced (white and light green portions only)
- 1/4 cup tomato salsa
- 2 TB chopped fresh cilantro
- 4 tsp low fat mayo
- 2 6 inch fat free flour tortillas
- 1/2 c loosely packed fresh baby spinach leaves or 2 romaine lettuce leaves
Pie-Strawberry Lime

Combine jello and boiling water in medium bowl; stir until jello dissolves
- 1 0.3 oz pkg sugar free strawberry jello
- 2/3 c boiling water
- 4 cups quartered fresh strawberries
- 1 ½ TB fresh lime juice, divided
- 1 6 oz ready-made shortbread piecrust (Keebler)
- 2 cups fat free frozen whipped topping, thawed
- ¼ tsp grated lime rind
Reduced Fat Pumpkin Pie

Preheat oven to 425. In mixer bowl combine all ingredients except pastry shell
- 1 - 9 “ unbaked pastry shell
- 1 - 15 oz can pumpkin
- 1 - 4 oz can Eagle brand low fat sweetened condensed milk (not evaporated)
- 4 egg whites
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- ½ tsp salt
Pork Tenderloin with Sweet Potato and Apple

Preheat oven to 450. Spray 9x13 inch baking dish with nonstick spray
- 1 TB chopped fresh parsley
- 1 tsp grated lemon zest
- 1 garlic clove, minced
- 1 tsp extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp coarsely ground pepper
- 1 one pound pork tenderloin, trimmed of all visible fat
- 1 large (10 oz) sweet potato, peeled and cut crosswise into 8 slices
- 1 TB water
- 1 apple, cut into 6 wedges
- 1 tsp packed dark brown sugar
- 1/8 tsp cinnamon

Beverage-Vanilla Smoothie Shake

In blender combine all ingredients; cover and process for 1 – 2 minutes
- ½ cup fat free vanilla ice cream
- ½ cup fat free milk
- 1 packet Weight Watchers French vanilla smoothie mix
Angel Food Cake Bars

Mix together. Pour into sprayed 10x15" jelly roll pan
- 1 pkg of one step angel food cake mix
- 1 (20 oz) can crushed pineapple including juice
- (or) a 15 ounce can of pumpkin,
- (or) a can of lemon pie filling glaze
- Glaze (optional)
Chicken-Spicy Skillet Chicken and Rice

Heat the oil in a medium nonstick skillet over medium high heat
- 1 tsp olive oil
- 1 onion, finely chopped
- 1/2 green bell pepper, seeded and chopped
- 1 garlic clove, minced
- 2 tsp Cajun seasoning
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/3 cup long grain white rice
- 1 - 14 1/2 oz can stewed tomatoes
- 1/2 cup water
- 1 cup cubed cooked chicken
- 4 pimiento stuffed olives, halved
Chicken & Broccoli Alfredo

Prepare linguine according to package directions in 3 qt saucepan
- ½ of 16 oz pkg linguine
- 1 c fresh or frozen broccoli flowerets
- 2 TB butter
- 1 lb skinless boneless chicken breasts cut into 1 ½” pieces
- 1 can cream of mushroom soup
- ½ c milk
- ½ c grated Parmesan cheese
- ¼ tsp ground black pepper
Lemon Poppyseed Cake

- 1 large pkg instant vanilla pudding
- 4 eggs (or 1 cup egg beaters)
