Bread Pudding with Anise

Spray a 1 1/2 qt casserole with nonstick cooking spray
- 4 slices 2 day old white bread
- 8 tsp reduced calorie tub margarine
- 6 TB golden raisins
- 2 cups low fat milk
- 2 eggs
- 3 TB honey
- 1/2 tsp anise seeds, lightly crushed
- 1/2 tsp vanilla
- pinch of salt
Apple Cinnamon French Toast

Whisk milk, egg whites, honey, vanilla and sale in a large bowl
- 3 cups nonfat milk
- 2 cups liquid egg whites, such as Egg Beaters
- 3 TB honey
- 1 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 one pound loaf whole wheat bread, sliced
- 1 cup apples, chopped
- 1/2 cup raisins (optional)
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 TB confectioners sugar
Breakfast Quesadilla

Preheat the oven to 350 degrees
- 1 egg
- 1 ounce grated low-fat cheese or Parmesan cheese
- 1 tablespoon salsa
- 1 small flour tortilla (preferably whole wheat)
Chicken in a Pot

Put carrots, onion, and celery in bottom of crockpot
- 2 carrots, sliced
- 2 onions, sliced
- 2 celery stalks, cut into 1" pieces
- 3-4 whole fryer chicken
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 cup water, chicken broth, or white wine
- 1/2 tsp dried basil
Curried Cauliflower

Melt butter in a large nonstick skillet over medium high heat
- 2 tsp light stick butter
- 1 cup chopped onion
- 1 garlic clove
- 1 (1 inch) piece fresh ginger, minced
- 4 cups fresh cauliflower
- 1/2 cup water
- 1 1/2 tsp curry powder
- 1/2 tsp salt
Waldorf Pasta Salad with Creamy Citrus Dressing

Cook pasta according to package directions
- 1 cup rotini pasta
- 1 apple, cored and cut into 1/2 inch chunks
- 1/2 cup seedless grapes, halved
- 1 small carrot, chopped
- 1 celery stalk, finely chopped
- 2 TB raisins
- 2 TB chopped fresh parsley
- 1/4 cup fat free mayo
- 1 TB fresh lemon juice
- 1 TB orange juice
- 2 tsp honey
- 1/2 tsp salt
- 2 TB toasted chopped walnuts
Pasta Primavera

Cook pasta according to the directions on package
- 12 oz linguine or spaghetti
- 1 TB olive oil
- 3 cloves garlic, minced
- 1 ½ c small broccoli florets
- 1 ½ c zucchini julienne strips
- 1 c carrot julienne strips
- 1 sweet red pepper cut into thin 1“ long strips
- ¼ dry white wine or nonalcoholic white wine
- 1 tsp dried thyme
- ¼ tsp ground black pepper
- ½ c finely shredded fresh Parmesan cheese (optional)
- ¼ c snipped and loosely packaged fresh Italian parsley (optional)
CALICO BEANS

Brown hamburger, bacon, and onion
- 1 pound hamburger
- ½ cup bacon
- ½ cup onion
- 1 can kidney beans
- 1 can lima beans, drained
- 1 can butter beans, drained
- 1 large can pork and beans
- 1 tsp salt
- 1 TB vinegar
- ¾ cup brown sugar
- ½ cup catsup
- 1 tsp mustard
Casserole-Country Turkey Casserole

Mix soups, thyme, black pepper, vegetables, and turkey in 3 qt shallow baking dish
- 1 can (10 ¾ oz) Campbell’s Cream of Celery soup
- 1 can (10 ¾ oz) Campbell’s Cream of Potato soup
- 1 cup milk
- ¼ tsp dried thyme leaves, crushed
- 1/8 tsp tsp ground black pepper
- 4 cups cooked cut up vegetables
- 2 cups cubed cooked turkey or chicken
- 1 ½ cups water
- 4 TB margarine or butter
- 4 cups Pepperidge Farm Herb Seasoned stuffing
Pasta BBQ Chili

Cook pasta according to package directions; drain and set aside
- 8 oz rotelle or wagon wheel pasta
- 1 TB oil, preferably canola
- 1 onion, chopped, about one cup
- 8 oz ground turkey breast
- 1 green pepper, coarsely chopped, about 1 ½ cups
- 1 can (11 oz) corn, drained
- 1 TB chili powder
- 1 TB dried oregano
- ½ tsp salt
- 1 can (19 oz) red kidney beans, drained and rinsed
- 1 can (8 oz) tomato sauce
- ¾ cup bottled barbecue sauce
