- 1 tbsp light, unsalted butter
- 1 tbsp all-purpose whole wheat flour
- 2 tsp ground cinnamon
- ½ cup low-sodium chicken stock
- ½ cup orange juice
- ½ tsp dried tarragon
- ¼ tsp pepper
- ¼ tsp salt
- 1 orange, sliced
Chicken Dijon w/Almonds

Preheat oven to 375. Place chicken in lightly greased 13x9 inch baking dish
- 4 small boneless skinless chicken breast halves
- 2 TB Kraft Mayo light mayonnaise
- 2 TB grey poupon Dijon mustard
- ¼ c planters slivered almonds, coarsely chopped
Chocolate Dream Cake

Preheat oven to 350 degrees
- 3/4 cup unsweetened cocoa powder
- 1/4 cup sugar
- 1/2 cup boiling water
- 1 pkg (16 oz) angel food cake mix
- 1 1/4 cups water
- 1 TB instant coffee powder
- 1 1/2 c skim milk
- 1 pkg (1 1/3 oz) whipped topping mix
- 1 pkg (1.4 oz) sugar free instant chocolate pudding mix
Chicken-Sesame

Combine the chicken and buttermilk in a small bowl; cover and refrigerate about 20 minutes
- 2 - 5 oz skinless boneless chicken breast halves
- 1/2 cup low fat buttermilk
- 2 TB plain dry bread crumbs
- 1 TB sesame seeds
- 1/2 tsp Cajun seasoning
- 2 tsp olive or canola oil

Chicken - Sweet and Sour

Drain pineapple. Reserve juice
- 1 – 8 oz can unsweetened pineapple chunks in juice
- 1 lb boneless skinless chicken breast
- 1 can swansons chicken broth
- ¼ c vinegar
- ¼ c brown sugar or 5 – 6 packets Equal (if using Equal add after mixture is thickened with cornstarch)
- 2 tsp soy sauce
- ½ tsp chopped garlic
- 1 c sliced celery
- 1 small onion quartered
- 1 green pepper sliced
- 3 TB cornstarch
- ¼ c water
Chicken Vegetable Ranch Bake

- 1 medium onion cut in wedges
- 1 small broccoli cut in pieces
- 1 small zucchini sliced
- 8 oz fresh mushrooms quartered

- 2 TB lemon juice
- 2/3 cup chicken broth fat free, less sodium
- ½ packet Hidden Valley Ranch Dressing dry
- 8 cups cooked rice
Low Fat Lemony Cheesecake

Preheat oven to 300. Spray bottom of 8 inch springform pan with cooking spray; sprinkle crumbs on bottom of pan
- Vegetable cooking spray
- ¼ c graham cracker crumbs
- 2 – 8 oz packages fat free cream cheese (not in a tub)
- 1 – 14 oz Eagle brand fat free sweetened condensed milk (not evaporated)
- 4 egg whites
- 1 egg
- ½ c real lemon juice from concentrate
- 1 tsp vanilla extract
- ¼ c sifted flour
- 1 c fresh assorted fruit
Fudge Brownies - Fat Free
