  • 2 tsp cinnamon
  • 1 ½ c grated carrots
  • 3 apples peeled and grated
  • 1 ½ c raisins, fresh blueberries, or craisins
  • 1 c chopped walnuts, pecans, or almonds
  • ½ c buttermilk
  • 2 eggs beaten
  • 1 tsp vanilla
