Beef Stroganoff Topped Potato

Generously pierce potato with fork
- 1 medium baking potato
- 1 tsp olive oil
- 4 oz beef flank steak cut across grain into thin bite-size strips
- 1 cup sliced fresh mushrooms
- 1 small onion cut into thin wedges
- ½ tsp garlic powder
- 1/8 tsp pepper
- 1 can Progresso Light Savory Vegetable Barley Soup (18.5 oz)
- ¼ fat free sour cream
- 2 TB chopped fresh parsley
Banana Bread w/Flax

Preheat oven to 350. Coat a no-stick 8x4 loaf pan with no-stick spray
- ½ c packed light brown sugar
- ½ c low-fat buttermilk
- ¼ c fat-free egg substitute
- 3 TB canola oil
- ¾ c unbleached all-purpose flour
- ½ c whole wheat flour
- ¾ c ground flaxseed
- 1 tsp baking powder
- 1 tsp baking soda
- 1/8 tsp salt
- 1 c pureed bananas
PORK CHOP SUEY

Cut pork into 1” strips, 14” thick
- 1 lb boneless pork tenderloin
- 2 TB soy sauce
- 1 c beef broth
- 1 c sliced onion
- 2 c sliced celery
- 2 ½ TB cornstarch
- ¼ tsp ginger
- 1 TB molasses
- ¼ c water
- 1 16 oz can bean sprouts
- (or use 1 can chop suey vegetables and bean sprouts and water chestnuts)
Tomato Mini Pizzas

Preheat oven to 400. Spray a large nonstick baking sheet with nonstick cooking spray
- 2 large pocketless pitas
- 2 large plum tomatoes, thinly sliced
- 1/4 tsp salt
- 2 TB chopped basil
- 2 tsp olive oil
- 2 garlic cloves, minced
- 1/3 cup shredded part skim mozzarella cheese
Pasta BBQ Chili

Cook pasta according to package directions; drain and set aside
- 8 oz rotelle or wagon wheel pasta
- 1 TB oil, preferably canola
- 1 onion, chopped, about one cup
- 8 oz ground turkey breast
- 1 green pepper, coarsely chopped, about 1 ½ cups
- 1 can (11 oz) corn, drained
- 1 TB chili powder
- 1 TB dried oregano
- ½ tsp salt
- 1 can (19 oz) red kidney beans, drained and rinsed
- 1 can (8 oz) tomato sauce
- ¾ cup bottled barbecue sauce
Impossible Pumpkin Pie

Heat oven to 350. Spray pie plate with Pam
- ¾ c sugar or Splenda
- ½ c reduced fat Bisquick
- 1 – 2 TB margarine/butter (light)
- 1 can (13 oz) evaporated fat free milk
- ½ c egg beaters
- 1- 16 oz can pumpkin
- 2 ½ tsp pumpkin pie spice
- 2 tsp vanilla
QUICK CHICKEN TERIYAKI

Heat dressing in large nonstick skillet on medium-high heat
- ¼ c Kraft Light Done Right Zesty Italian Reduced Fat Dressing
- 1 lb boneless skinless chicken breasts, but into strips
- 1 1/3 c water
- ¼ c teriyaki sauce
- ½ tsp garlic powder
- 2 c frozen broccoli florets
- 1 ½ c Minute white rice, uncooked
Pork Chops w/Apples & Stuffing

Heat oven to 375. Prepare stuffing as directed on package
- 1 pkg (6 oz) stove top stuffing for chicken
- 1 can (21 oz) apple pie filling
- 6 boneless pork loin chops (1 ½ lb) ¾ inch thick

- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/4 tsp ground nutmeg
- 1 cup unsweetened applesauce

- 1 tsp vanilla extract
- 2/3 cup dark raisins
