Chili Beef Macaroni

Cook macaroni according to package directions, omitting salt and fat
- 2/3 cup elbow macaroni, uncooked
- Vegetable cooking spray
- 3/4 pound lean ground chuck
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 1 clove garlic, minced
- 1 (15 oz) can dark red kidney beans, drained
- 1 (14 1/2 oz) can no salt added whole tomatoes, undrained and chopped
- 1 (8 oz) can no salt added tomato sauce
- 1 TB Dijon mustard
- 2 tsp chili powder
- 2 tsp lemon juice
- 3/4 tsp ground cumin
- 1/2 tsp pepper
- 1/4 tsp salt
Chicken and Broccoli Pizza

Preheat the oven to 450 F
- 1 TB reduced calorie mayo
- 1 tsp low fat milk
- 1/2 pound skinless boneless chicken breasts, cut into 1/2 inch strips
- 1/2 cup cornflake crumbs
- 3/4 cup part skim ricotta cheese
- 1 (10 oz) package thin crust pizza crust
- 1 (10 oz) package frozen chopped broccoli, thawed and patted dry
- 3 TB grated Parmesan cheese
- 1/2 cup shredded part skim mozzarella cheese
Cinnamon Raisin Bread Pudding

Preheat oven to 350 F. Spray a 1 1/2 quart shallow baking dish with nonstick spray
- 1 cup fat free milk
- 2 large eggs
- 1/4 cup + 1 TB sugar
- 1/2 tsp vanilla extract
- 8 slices cinnamon raisin swirl bread cut in 1 inch cubes
Chicken and Rice Casserole

Stir the soup, water, rice, vegetables, and onion powder in a 12x8 inch shallow baking dish
- 1 can (10 ¾ oz) Cream of Chicken soup
- 1 1/3 c water
- ¾ cup uncooked long-grain white rice
- 2 c fresh or frozen vegetables
- ½ tsp onion powder
- 4 skinless, boneless chicken breast halves
- ½ c shredded Cheddar cheese
Chicken in a Packet

Preheat oven to 350 degrees
- 1/2 cup bottled barbecue sauce
- 4 (4 oz) skinless, boneless chicken beast halves
- 1 green pepper, cut into strips
- 1 sweet red pepper, cut into strips
- 4 small baking potatoes or 12 new potatoes, thinly sliced
- 1/4 tsp ground black pepper
Salad-Strawberry Spinach

Chop onion into bite size pieces
- ¾ c Kraft fat free mayonnaise dressing
- 2 packets Splenda
- ¼ c fat free milk
- 2 TB apple cider vinegar
- 2 TB poppy seeds
- 8 c Dole spinach
- 1 pound strawberries
- ½ c red onions
APPLE PIZZA

Preheat over to 375. Spray 14” round pizza pan or large baking sheet with oil and sprinkle cornmeal on it
- 1 TB cornmeal
- 1 ten oz pkg refrigerated pizza dough
- 4 apples peeled, halved, and cored
- ¼ cup sugar
- ¼ tsp ground cinnamon
- ¼ cup apricot preserves, preferably all fruit or sugar free
- 1 TB orange liqueur or apple juice
Apple Pan Dowdy

Preheat oven to 425. Spray 9 inch square baking pan with nonfat cooking spray
- 1 - 21 oz can apple pie filling
- 1 - 7.5 oz can buttermilk biscuits
- 1/4 cup packed dark brown sugar
- 1 TB ground cinnamon
- 1 TB Butter Buds Sprinkles - dry
- 1/2 tsp ground cloves
Tex Mex Stir Fry

In a large nonstick skillet or wok, heat 2 tsp of the oil until hot but not smoking over medium heat
- 1 TB vegetable oil
- 1/2 pound well trimmed sirloin, cut into 2x1/8 inch strips
- 1 TB chili powder
- 1 tsp ground cumin
- 1/8 tsp cayenne pepper
- 1 red bell pepper, cut into thin strips
- 1 green bell pepper, cut into thin strips
- 1 red onion, sliced
- 2 ribs celery, sliced
- 3/4 cup reduced sodium chicken broth, defatted
- 2 TB ketchup
- 10 oz pkg frozen corn kernels, thawed
- 1 cup canned red kidney beans, rinsed and drained
- 1 cup halved cherry tomatoes
- 1/4 cup chopped fresh cilantro or parsley
Banana Molasses Oat Bread

Preheat over to 350. Lightly spoon flours into dry measuring cups; level with a knife
- Because of whole wheat flour and oats, the chewy loaf will not rise very high.
- 1 c all-purpose flour
- ½ c whole wheat flour
- 2/3 c regular oats
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 2/3 c sugar
- ¼ c butter, softened
- 1/3 c dark molasses
- 2 large eggs
- 1 c mashed ripe banana (about 2 bananas)
- 1/3 c plain low-fat yogurt
- 1 tsp vanilla extract
