Chicken Sweet and Sour Stir Fry

Prepare tenders as directed on package
- 1 8 oz package of Banquet breast tenders
- 4 cups frozen stir-fry vegetables
- 1 cup sweet and sour sauce
- 4 cups hot cooked rice
Pasta Salad Primavera

To prepare dressing, in small bowl, combine the yogurt, cheese, vinegar, lemon zest, oil, garlic, and pepper
- 1/3 cup plain nonfat yogurt
- 2 TB grated Parmesan cheese
- 1 TB red wine vinegar
- 1 tsp grated lemon zest
- 1 tsp olive oil
- 1 garlic clove, minced
- 1/4 tsp freshly ground pepper
- 2 cups cooked rotelle
- 1 cup small broccoli florets, steamed until tender crisp
- 1 cup small cauliflower florets, steamed until tender crisp
- 12 cherry tomatoes, halved
- 1/4 cup shredded basil
- 1/2 red onion, chopped
Ham and Potato Pie

Heat oven to 425. Spray pan with Pam and sauté onion until soft
- ¾ c finely chopped onion
- ½ c finely chopped green pepper
- ½ c defatted chicken broth
- Salt/pepper to taste
- 1 Tbsp Worcestershire sauce
- 1 ½ c chopped ham
- 1 17 oz creamed corn
- 2 cups mashed potatoes
Brownie Bites

In a small saucepan melt margarine or butter; remove from heat
- 2 TB margarine or butter
- 1/3 cup granulated sugar
- 1/4 cup cold water
- 1/2 tsp vanilla
- 1/2 cup all purpose flour
- 2 TB unsweetened cocoa powder
- 1/2 tsp baking powder
- 2 TB chopped walnuts or pecans
- nonstick spray coating
- 1 tsp powdered sugar
Cinnamon Rolls

Melt together butter, cinnamon, and brown sugar
- 6 – 8 oz chopped pecans
- 1 pkg frozen dough balls, about 15 (such as Rhodes)
- 3 oz pkg vanilla pudding (not instant) dry
- ½ c butter
- ¼ tsp cinnamon
- ½ c brown sugar (packed)
PUMPKIN TURTLE PIE

Drizzle 2 TB of the caramel topping on the bottom of the crust and sprinkle with 3 TB of the pecans
- 3 TB fat-free caramel topping
- 1 (6 oz) reduced fat graham cracker crust
- 4 TB coarsely chopped toasted pecans
- 1 c fat-free milk
- 1 (3 ¼ oz) serving size package vanilla instant pudding and pie filling mix
- 1 c canned pumpkin puree
- 1 tsp pumpkin-pie spice
- 1 ½ c fat-free whipped topping
Frosted Brownie Cookies

Heat oven to 350. Coat cookie sheet lightly with no-stick cooking spray
- Crisco no-stick cooking spray
- 1 (15.8) pkg. Pillsbury Double Chocolate Brownie Mix
- 1/3 c Crisco butter flavor shortening, melted
- 1 egg
- 1 (16 oz) can Pillsbury Creamy Supreme cream cheese frosting

Vegetables-Glazed Carrots

Cut carrots into 2” long pieces
- 1 POUND CARROTS
- 4 TSP APPLE JUICE
- 1 TB BROWN SUGAR
- 1 TSP BUTTER
- ¼ TSP GROUND NUTMEG (OPTIONAL)
Apple Cherry Cobbler

Combine first 3 ingredients in a large bowl; stir gently
- 1 (14.5 oz) can pitted red tart cherries in water, drained
- 3 1/2 cups cubed, peeled Braeburn apple (about 3 large apples)
- 1/4 cup granulated sugar
- 3/4 cup all purpose flour
- 1 1/4 tsp baking powder
- 1/8 tsp salt
- 3 TB butter or stick margarine, melted
- 2/3 cup sugar
- 2 large eggs
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
- 1 tsp powdered sugar (optional)
BEEF ‘N TATERS

Brown beef. Mix instant onion, water, and soup with beef
- 1 lb ground beef or turkey
- 2 TB instant onion
- 1 one pound pkg frozen tater tots
- 1 can cream of celery soup
- ¼ - ½ c water
