Chicken Southwestern

In 5 pt slow cooker, combine beans, corn and half of the salsa
- 2 cans (15 ¼ oz each) whole kernel corn, drained
- 1 can black beans (15 oz), rinsed and drained
- 1 jar (16 oz) chunky salsa, divided
- 6 boneless, skinless chicken halves (4 oz each)
- 1 c (4 oz) shredded cheese
CHOCOLATE ANGEL CAKE AND FROSTING

Preheat oven to 350. Line a 10x15 inch jelly roll pan with waxed paper
- ¾ c unsweetened cocoa powder
- ¼ c sugar
- ½ c boiling water
- 1pkg (16 oz) angel food cake mix
- 1 ¼ c water
- 1 TB instant coffee powder
- 1 ½ c skim milk
- 1 pkg (1 1/3 oz) whipped topping mix
- 1 pkg (1.4 oz) sugar free instant chocolate pudding mix
Chicken-Crispy Onion

- 1 1/3 cups French’s French fried onions
- 4 – 6 boneless skinless chicken breast halves
- 2 – 3 tsp French’s mustard

Instructions: 1. Peel and grate the potatoes and onion by hand or in a food processor and put them in a large bowl

- 1 cup matzo meal, medium grain
- 1 egg
- 1 to salt, or more to taste
- 1/4 cup quality extra-virgin olive oil
- GARNISH:
- Low-fat sour cream
- Fresh applesauce
Topsy Turvy Apple Pie

1. In 9 inch glass pie pan, combine brown sugar, margarine and corn syrup; mix well
- GLACE & CRUST:
- 1/4 cup firmly packed brown sugar
- 1 TB margarine or butter, melted
- 1 TB corn syrup
- 1/4 cup pecan halves
- 1 (15 oz) pkg Pillsbury refrigerated pie crusts, softened as directed on package
- FILLING:
- 2/3 cup sugar
- 2 TB all purpose flour
- 1/2 tsp cinnamon
- 4 cups (4 medium) thinly sliced peeled apples
- TOPPING:
- Whipped cream, if desired

- 1 ½ lbs ground round
- 1 cup tomato sauce
- ¾ c quick cooking oats uncooked
- ½ c chopped onion
- ½ c shopped celery
- 1 egg
Cheesecake - Guilt Free Chocolate Cheesecake

Preheat oven to 350 Coat 4 three inch ramekins lightly with cooking spray
- ¼ c crunchy high fiber, low sugar cereal (such as Grapenuts) finely crushed
- ½ c fat free cream cheese at room temperature
- 2 TB honey
- 1 large egg white
- ¼ c fat free vanilla yogurt
- ¼ tsp vanilla extract
- ¼ c cocoa powder, plus more for garnish
- 4 TB aerosol fat free whipped topping (optional)

Preheat the oven to 400. In a large pot of boiling water, cook the cauliflower for 4 minutes to blanch
- 5 cups cauliflower florets
- 1/2 cup reduced sodium chicken broth, defatted
- 3/4 tsp grated lemon zest
- 1/2 tsp salt
- 1/2 tsp dried marjoram
- 1/4 tsp freshly ground black pepper
- 1/4 cup plain dried bread crumbs
- 2 TB grated Parmesan cheese
- 1 tsp olive oil
- 2 tsp fresh lemon juice
8 Minute Cheesecake

- 1 pkg. (8 oz) cream cheese softened (fat free)
- 1/3 c sugar (Splenda)
- 1 c (1/2 pint) sour cream (fat free)
- 2 tsp vanilla
- 1 – 8 oz container Cool Whip (thawed) (fat free)
- 1 Keebler ready crust graham cracker pie crust (reduced fat)
- Free strawberries for garnish
