Flounder-Crispy Cornmeal

Combine the cornmeal, parsley, oregano, Cajun seasoning, and salt on a large plate

- 1/4 cup chopped fresh parsley

- 2 tsp Cajun seasoning

- 2 egg whites, lightly beaten
- 3 TB Dijon mustard
- 4 (6 oz) flounder or sole fillets, skinned
- 4 tsp olive oil

- 1 TB red wine vinegar
- 1 tsp grated lemon zest
- 4 tsp olive oil
- 1 garlic clove, minced
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 2 cups cooked rotelle
- 1 c small broccoli florets, steamed until tender crisp
- 1 c small cauliflower florets, steamed until tender crisp
- 12 cherry tomatoes, halved
- 1/4 c shredded fresh basil

Preheat oven to 400. Spray an 8" square pan or 12 cup muffin tin with nonstick cooking spray
- 1 1/4 cups yellow cornmeal
- 3/4 cup all purpose flour
- 4 tsp sugar
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup + 2 TB low fat buttermilk
- 1 egg
Cake-Angel Food Variation

- 1 tsp salt

- 1 cup whole wheat flour
- 1 cup quick cooking oats
- 1/4 cup sugar
- 2 TB cocoa powder
- 1 tsp baking soda
- 1/2 cup plus 2 TB chocolate syrup
- 1 tsp vanilla extract
- 1/4 cup dark raisins
- 1/4 cub chopped walnuts
- 1/4 cup chocolate chips

Combine first 4 ingredients in a medium bowl; make a well in center of mixture
- 1/4 cup yellow cornmeal
- 1/4 cup all purpose flour
- 1 tsp baking powder
- 1/2 tsp sugar
- 1/4 cup skim milk
- 1 TB egg substitute
- 1 1/2 tsp vegetable oil
- Vegetable cooking spray
Rosemary Chicken w/Broccoli and Potatoes

In a medium pot of boiling water, cook the potatoes for 5 minutes to blanch
- 3/4 pound small red potatoes, thinly sliced
- 2 TB flour
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 4 chicken breast halves (about 1 1/2 pounds total) skinned
- 1 TB olive oil
- 8 cloves garlic, peeled
- 1/2 tsp dried rosemary
- 1/8 tsp red pepper flakes
- 1/4 cup dry vermouth or dry white wine
- 1 1/2 cups reduced sodium chicken broth, defatted
- 3 cups broccoli florets
Old Fashioned Strawberry Shortcake

To make fruit topping, combine the strawberries and sugar
- BISCUITS:
- 1 1/2 cups unbleached flour
- 1/2 cup oat bran
- 1/4 cup sugar
- 1 TB baking powder
- 4 TB chilled reduced fat margarine or light butter, cut into pieces
- 2/3 cup nonfat buttermilk
- 3 TB fat free egg substitute
- FRUIT TOPPING:
- 3 cups sliced fresh strawberries
- 1/3 cup sugar
- CREAM TOPPING:
- 1/2 cup nonfat vanilla yogurt
- 3/4 cup whipped topping
Appetizer-Artichoke Dip

Preheat oven to 350. Mix cream cheese, artichokes, parmesan, and garlic until well blended
- 1 – 8 oz Philadelphia cream cheese
- 1 – 14 oz can artichoke hearts, drained and chopped
- ½ c shredded parmesan cheese
- 2 garlic cloves, minced
- 1 small red pepper
- 1 – 3 ½ oz pkg crumbled feta cheese
- Tricuits/bagel chips
APPLE CHERRY COBBLER

Combine first 3 ingredients in a large bowl; stir gently
- 1 – 14.5 oz can pitted red tart cherries in water, drained
- 3 ½ cups cubed, peeled Braeburn apple (about 3 large apples)
- ¼ c granulated sugar
- ¾ c all purpose flour
- 1 ¼ tsp baking powder
- 1/8 tsp salt
- 3 TB butter or margarine, melted
- 2/3 c sugar
- 2 large eggs
- ½ tsp vanilla
- ¼ tsp almond extract
- 1 tsp powdered sugar (optional)
