Banana Walnut Bread

Preheat oven to 325. Grease 9x5x3 loaf pan and dust with flour
- 2 c flour
- 1 tsp baking soda
- ¼ tsp salt
- 1 egg
- 1 1/8 c sugar
- ½ c vegetable oil
- 2 TB buttermilk
- ½ tsp vanilla
- 3 ripe medium bananas – mashed
- ½ c + 1/3 c cup chopped walnuts
Sour Cream Coffee Cake

Cream butter and sugar; add eggs to creamed mixture
- NUT MIXTURE:
- ½ cup butter or margarine
- 1 cup sugar
- 2 eggs, unbeaten
- 1 cup sour cream
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 1 tsp vanilla
- ½ cup chopped nuts
- ¼ cup sugar
- 1 tsp cinnamon
SAVORY CREAMED HAM AND VEGETABLES

Combine ham, soup, milk, and mustard in large skillet
- 2 cups diced cooked ham or chicken
- 1 can (10 ¾ oz) condensed cream of mushroom soup
- 1/3 cup milk
- 1 TB Dijon mustard
- 1 can (15 ¼ oz) Del Monte Freshcut whole kernel corn, drained
- 1 can (8 ¼ oz) Del Monte freshcut sliced carrots, drained
Carrot Cake with Maple Cream Frosting

Preheat oven to 350 F. Spray an 8 inch square baking pan with nonstick spray
- 1 1/2 cups cake flour (not self rising)
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/8 tsp ground allspice
- 3/4 cup granulated sugar
- 2 egg whites
- 1 egg yolk
- 2 TB olive oil
- 1 - 8 oz can crushed pineapple, drained, 1/4 cup liquid reserved
- 1 cup shredded carrots (about 2 medium)
- 1/4 cup dark raisins
- 4 oz light cream cheese (Neufchatel)
- 1/4 cup confectioners sugar
- 1 TB maple syrup
Casserole - Beef Tater Topped Casserole

Heat oven to 375 Brown meat with onions in skillet; stirring occasionally; drain
- 1 LB. GROUND BEEF
- 1 SMALL ONION, FINELY CHOPPED
- 1 CAN CONDENSED CREAM OF MUSHROOM SOUP
- ¼ C MILK
- 1 CUP FROZEN MIXED VEGETABLES
- 1 CUP KRAFT SHREDDED CHEDDAR CHEESE
- 1 LB (1/2 OF 32 OZ PKG) FROZEN BITE SIZE SEASONED POTATO NUGGETS
Scotcheroo Rice Krispie Bars

Cook syrup and sugar until it starts to boil
- 1 CUP LIGHT KARO SYRUP
- 1 CUP SUGAR
- 1 CUP PEANUT BUTTER
- 6 CUPS RICE KRISPIES
- Frost with 1 CUP CHOCOLATE CHIPS
- 1 CUP BUTTERSCOTCH CHIPS
Meatloaf

Heat over to 350F. Heat oil in small skillet over medium heat
- 1 tsp vegetable oil
- 1/4 cup chopped onion
- 1 pound lean ground beef
- 1 large egg
- 1 cup fresh bread crumbs
- 1/4 cup ketchup
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/8 tsp freshly ground pepper
- Mashed potatoes and green beans
Sweet Potato Wedges Curried

- 2 pounds sweet potatoes, scrubbed
- 1 TB canola oil
- 2 tsp curry powder
- 1/2 tsp salt
- Pinch cayenne
Pork Chop Dinner

Preheat oven to 425. Lay four 12"x18" pieces of aluminum foil or parchment paper on work surface
- 1/2 cup ketchup
- 2 TB packed brown sugar
- 1 TB reduced sodium soy sauce
- 2 tsp canola oil
- 1 tsp chili powder
- 1/4 tsp ground allspice
- 1/4 tsp freshly ground black pepper
- 4 boneless center cut loin pork chops (4 oz each) trimmed
- 3 large potatoes cut into 1/2" cubes
- 3 large onions thinly sliced
- 1 large stalk celery thinly sliced
- 2 large carrots thinly sliced
