Muffins-Herbed Corn

Preheat the oven to 425 F
- 1 cup cornmeal
- 3/4 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp salt
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp dried thyme
- 1 cup fat free buttermilk
- 1 large egg, lightly beaten
- 1 1/2 TB butter, melted
Chicken-Moroccan Style Ziti

To prepare the sauce, sprinkle the chicken with the salt and pepper
- 1 lb. skinless boneless chicken cut into 1 inch pieces
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1 medium onion, diced
- 1/2 tsp curry powder
- 1 - 14 1/2 oz can diced tomatoes with italian herbs
- 1/2 pound ziti or penne
Buttermilk Corn Muffins

Combine first 5 ingredients in a large bowl; make a well in center of mixture
- 1 cup yellow cornmeal
- 1 cup all purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups nonfat buttermilk
- 1/4 cup egg substitute
- 1 TB vegetable oil
- Vegetable cooking spray
SCALLOPED POTATOES WITH CARROTS AND HAM

Coat a 2 qt nonstick saucepan with nonstick spray and heat the pan for 1 minute over medium heat
- ½ C DICED COOKED LEAN HAM
- ½ C CHOPPED ONIONS
- 1 CAN REDUCED FAT CREAM OF MUSHROOM SOUP
- ½ C SKIM MILK
- 2 TB SNIPPED FRESH PARSLEY
- 5 MEDIUM POTATOES, PEELED, SLICED, AND COOKED
- 1 ½ C SLICED CARROTS, COOKED
Quinoa Primavera

Saute’ carrots, onion, and celery in olive oil until vegetables are beginning to brown
- 1 c uncooked quinoa
- 2 c fat free chicken broth
- 1 c carrots
- 1 c celery
- 1 c onion
- 4 tsp olive oil
Cinnamon Crisps

Combine water and vanilla
- 3 TB hot water
- 1 1/2 tsp vanilla extract
- 1/4 cup plus 1 TB sugar
- 1 TB ground cinnamon
- 12 (6 inch) flour tortillas
- Vegetable Cooking Spray
Cheesy Roasted Cauliflower

Low carb and healthy side dish
- 1 medium head cauliflower, trimmed and cut into florets
- 3 large cloves garlic, minced
- 1/4 cup olive oil
- 2 TB lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 TB grated Parmesan cheese
Stuffed Baked Tomatoes

1. Preheat oven to 400F. 2
- 2 large ripe summer tomatoes
- 1 cup small curd cottage cheese
- 1/4 cup finely chopped fresh basil, spinach, or arugula
- 2 crushed garlic cloves
- 1/2 cup grated Parmesan cheese
Black Beans and Rice

Bring all ingredients except rice to a full boil in a 4 1/2 qt saucepan over medium high heat
- 2 tsp minced garlic
- 1 tsp liquid smoke
- 4 oz extra lean cooked ham cut into tiny pieces
- 1/2 cup chopped onion
- 1 - 15 oz can black beans, undrained
- 1 cup instant long grain white rice
Muffins-Blueberry

Heat oven to 400. Place paper baking cups in 12 muffin cups or grease bottoms only of muffin cups
- 2 c Bisquick reduced fat baking mix
- 1/3 c sugar
- ¾ c skim milk
- 1 TB margarine, melted
- 1 egg
- ¾ c fresh or frozen (thawed and drained) blueberries
