1. Heat oven to 425° F. Lightly oil a cast-iron skillet with a little canola oil
- Ingredients:
- 1 1/4 cups yellow cornmeal (organic and stone ground, if possible)
- 1 1/4 cups unbleached white flour
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 2 tablespoons brown sugar
- 1 1/2 cups boiling water mixed with 2 tablespoons expeller-pressed canola oil, plus a little extra for oiling the skillet
Bisquick Bisuits Low Fat

Heat oven to 450. Stir ingredients until soft dough forms
- 2 c Bisquick reduced fat baking mix
- ¾ c skim milk
Egg Noodles with Ham, Cabbage, and Apples

In a large pot of boiling water, cook the noodles until tender; drain well
- 8 oz yolkless egg noodles
- 1 TB vegetable oil
- 1 onion, coarsely chopped
- 6 oz reduced fat ham, diced
- 1 tsp cumin seeds or 1/2 tsp ground cumin
- 2 cups shredded cabbage
- 1 red delicious apple, cored and diced
- 1 cup reduced sodium chicken broth, defatted
- 1 TB cider vinegar
- 2 tsp Dijon mustard
- 1 TB cornstarch
Bacon and Corn Pudding

Preheat over to 350. Cut bacon into half inch pieces and prepare according to package
- 12 slices Schwan's thick sliced bacon, thawed
- 1/2 cup chopped onion
- 1/2 cup green pepper, chopped
- 1/2 cup butter
- 1/3 cup all purpose flour
- 1 tsp salt
- 2 cups sour cream
- 2 cans (15 oz) cream style corn
- 1 bag Livesmart Super Sweet Cut corn, frozen
Shredded Apple Slaw

Combine first 4 ingredients in a small bowl, and stir until smooth with a whisk
- 1/4 cup light mayo
- 1 TB cider vinegar
- 1 - 1 1/2 tsp sugar
- 1/3 tsp salt
- 1 (8z) Granny Smith apple, unpeeled
- 3 cups finely shredded cabbage
Black Beans and Rice

In a medium nonstick saucepan, heat the oil
- 4 tsp olive oil
- 1 green bell pepper, seeded and finely chopped
- 1 onion, finely chopped
- 5 - 6 garlic cloves, finely chopped
- 1 (16 oz) can black beans, rinsed and drained
- 1 (14 1/2 oz) can diced tomatoes
- 1 cup low sodium chicken broth
- 4 tsp dry sherry
- 1 tsp chopped thyme
- 1 bay leaf
- 1/4 tsp dried oregano leaves
- 1/4 tsp hot red pepper sauce
- 1 TB chopped cilantro
- Salt and freshly ground pepper, to taste
- 4 cups cooked white rice
Brownies-Light and Luscious

Place the margarine or butter in a medium sized saucepan, and melt over low heat
- 6 tablespoons reduced fat margarine or light butter
- 1 cup sugar
- 3 egg whites
- 1 tsp vanilla extract
- 3/4 cup unbleached flour
- 1/3 cup cocoa powder
- 1/3 cup chopped nuts (optional)

Combine the flour, wheat germ, baking powder, baking soda, and spices and stir to mix well
- 2 cups whole wheat flour
- 1/4 cup toasted wheat germ
- 1 tsp baking powder
- 1 tsp baking soda
- 1 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1 1/2 cups mashed very ripe banana (about 3 large)

- 1-1/2 cups unbleached white flour
- 1/2 cup whole wheat pastry flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 pint blueberries, washed
- FRESH FRUIT COMPOTE FOR PLAIN PANCAKES:
- 1 pint strawberries, washed, hulled, and sliced in half
- 1 pint blueberries, washed
- 1/2 cup pure maple syrup
