Ham and Yams in Cider Sauce

- 1 pound yams or sweet potatoes
- 1 (12 oz) lean ham steak, cut into four pieces
- 1 cup apple cider
- 2 tsp all purpose flour
- 1/8 tsp ground cloves

Step 1
Cover the yams with water in a large saucepan and bring to a boil. Boil until just tender, 30 - 40 minutes. Drain, peel, and slice 1/4 inch thick.
Heat a large nonstick skillet. Add the ham pieces and cook until lightly browned, about 1 minute on each side.
Whisk together the cider, flour, and cloves in a small bowl until smooth. Pour into the skillet and add the yams. Simmer gently, stirring often and turning the yams in the sauce, until the sauce is thickened, about 5 minutes.
