Add 1/2 c white wine to fry pan and poach chicken breasts until partially done
- 3 boneless chicken breasts (slightly flattened)
- 2 tbsp. olive oil
- 1 jar italian style tomato sauce (chunky kind is great)
- 1 box thawed and drained chopped spinach
- 2 slices of provalone cheese per breast
- salt and pepper to taste
- parmesan cheese to taste
- 1 clove garlic chopped
- 1/2 c. dry white wine
Bacon Spinach Salad

Mix all ingredients except dressing in large bowl
- 5 cups torn spinach leaves
- 1 c. sliced fresh mushrooms
- 1/2 c. thin red onion wedges
- 2 slices bacon, crisply cooked, drained and crumbled
- 2 hard boiled eggs, cut into wedges
- 1/3 c. creamy poppyseed dressing
Apple Cream Cheese Rose Tarts

Southwest Chicken and Ranch Salad

- 6 cups loosely packed torn romaine lettuce
- 2 cups chopped cooked chicken
- 1 can (15oz) black beans, rinsed
- 1 avocado, sliced

- 1/2 cup salsa

- 2 1/2 cups rotini
- 2 grilled boneless, skinless chicken breasts, sliced
- 1 roasted red pepper, cut into thin strips
- 1/4 cup chopped sun dries tomatoes
- 1/2 cup sliced or diced cucumber
- 1/2 cup bottled herb salad dressing
Summer Grilled Chicken Chef's Salad

- 1 lb (500g) boneless chicken breasts
- 2 tbsp. (30ml) dijon mustard
- 1 tbsp. (15ml) lemon juice
- 1 tbsp. (15ml) liquid honey
- 1/2 tsp. (2ml) each salt and pepper
- 1/2 c (125ml) poppy seed dressing
- 1 c (250ml) halved, seedlessgreen grapes
- 1/4 c (60ml) each thinly sliced radishes and toasted sunflower seeds
- 1 small head each iceberg and radicchio lettuce, quartered
- 2 oz. cheddar cheese, julienned

- 2 tbsp. honey
- 1/2 cup fresh lime juice
