Bacon Cheddar Ranch Pinwheels

In a small mixing bowl, combine cream cheese and ranch dressing
- 8 oz. cream cheese, softened
- 1/4 cup ranch dressing
- 1/2 cup finely shredded cheddar cheese
- 1 tbsp. minced chives
- 6 pieces bacon, cooked and chopped
- flour tortillas (6 small or 3 large)
Cheesy Chicken Pot Pie

Heat oven to 375F Combine first 4 ingredients in 13x9 inch baking pan
- 3 cups chopped cooked chicken
- 3 cups frozen mixed vegetables (carrots, corn, green beans, peas)
- 2 cups double cheddar shredded cheese
- 1 can (10oz.) low fat condensed cream of chicken soup
- 1 can (235g.) refrigerated crescent dinner rolls
French Onion Grilled Cheese

Heat a large non stick frying pan over high heat
- 1 tbsp. olive oil
- 3 medium onions, sliced thinly (about 3 1/2 cups)
- 1/2 900ml carton low sodium beef broth
- 1 thyme sprig
- 1/4 cup dry sherry (optional)
- 4 tsp. dijon mustard
- 8 slices rye bread
- 4 slices gruyere or swiss cheese
Fried Onion Rings

Wash and peel onions, cut into 1/4 inch thick rounds
- 3 large spanish onions or sweet onions
- 1/2 cup flour
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 tsp. baking powder
- 1 egg well beaten
- 1/2 cup milk
- cooking oil for deep frying
Fusilli with Three Cheeses and Red Bell Pepper

- 2 red bell peppers, cut into thin strips

Simple Risotto with Shrimp, Asparagus and Aged Cheddar

In a large skillet, melt butter on medium heat and cook onion and garlic for 2 minutes
- 1 tbsp. (15ml.) butter
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 1/4 cups (310ml.) arborio rice
- 1/2 cup (125ml.) white wine
- 3 cups (750ml.) sodium reduced chicken broth
- 1/2 tsp. (2ml.) dried thyme
- 1 bay leaf
- 1 1/3 lb.(600g.) large shrimp shelled
- 1 bunch of fresh asparagus (1 lb. - 450g.)cut into 1 inch segments
- 1 1/2 cups (375ml.) aged cheddar, grated
Quick Fix Barbecued Fajitas

Barbecue all your fajita fixings in a stir fry basket for a summery twist on an all time favorite
- 1 lb. boneless skinless chicken breasts, cut into strips
- 1 medium each green and red peppers, cut into strips
- 1 medium onion, cut into thin wedges
- 1/2 c. barbecue sauce
- 8 flour tortillas (6") warmed
- 1 c. tex mex shredded cheese
- 1/2 c. salsa
- 1/4 c. sour cream
Parmeasan Roasted Asparagus

Preheat oven to 425F. Lightly grease a baking sheet with non stick spray and set aside
- 1 1/2 lbs. fresh asparagus, trimmed
- 2 tbsp. olive oil
- 1/2 cup breadcrumbs
- 3/4 cup shredded parmesan cheese
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Chorizo & White Bean Stew

Heat oil over moderate heat in a large saucepan
- 2 tbsp olive oil
- 2 garlic cloves, roughly chopped
- 1 brown onion, roughly chopped
- 1 leek, sliced
- 1 celery stalk, chopped
- 250 g chorizo, roughly diced
- 2 tbsp smoked paprika
- 1 tbsp tomato paste
- 500 ml hot chicken stalk
- 2 medium white potatoes, diced
- 410 g can cannellini beans, drained & rinsed
- 2 tbsp chopped fresh parsley

- 1/4 cup real bacon pieces or 4 slices bacon, crisply cooked, crumbled
- 1/2 cup finely shredded cheddar cheese
- 1/4 cup chopped green onions (4 medium)
