Lime Shrimp and Avocado Salad

In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper
- 1 lb. jumbo cooked shrimp, peeled and deveined, chopped
- 1 medium tomato diced
- 1 avocado diced
- 1 jalapeno, seeds removed, diced fine
- 1/4 cup chopped red onion
- 2 limes juice of
- 1 tsp. olive oil
- 1 tbsp. chopped cilantro
- salt and fresh pepper to taste
Slow Cooker Bacon Ranch Chicken Melts

Spray slow cooker with cooking spray
- 4 or 5 boneless chicken breasts
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup chicken broth
- 2 Tbsp. dry ranch dressing mix
- 5 slices bacon
- 8 burger buns
- 4 tbsp. butter, softened
- 1 cup cheddar
- thinly sliced green onions and/or pickled jalapeno slices if desired
Grilled Chicken Roller

Heat barbecue to medium. Pound chicken to 1/4 inch thickness
- 4 small boneless skinless chicken breasts
- cheddar cheese slices
- 4 slices bacon
- 4 tbsp. extra virgin olive oil aged balsamic vinaigrette dressing

- 6 cups torn romaine lettuce
- 1 can (19oz./540ml.) black beans, rinsed
- 2 cups halved cherry tomaotes
- 1/2 cup thinly sliced red onions
- 1 cup kraft habanero heat shredded cheese
- 1/2 cup ranch dressing
Summer Swiss Slaw

- 3 c.(750ml) coarsely shredded green cabbage
- 1 c.(250ml) coarsely shredded red cabbage
- 1 c.(250ml) sliced celery
- 1 pkg. (227g) light swiss cheese
- 1/4 c(50ml) each chopped green onion & parsley
- 1/2 c(125ml) mayonnaise
- 1/2 c(125ml) sour cream

Crab Croissant-wiches

Preheat the oven to 350F. Place the cream cheese and crabmeat into a small microwave-safe bowl
- 1/2 (8oz.) pkg. cream cheese
- 3 tbsp. crabmeat
- 1/4 cup shredded Colby - jack cheese
- 1 (10oz.) can refrigerated crescent roll dough
Blue Chicken Salad

In a small bowl mix together dressing ingredients
- 1/4 cup mayonnaise
- 1 lime zested and juiced
- 1 1\2 tsp. red wine vinegar
- 1/2 tsp. sugar
- 1/2 tsp. dijon mustard
- 1 \2 tsp. paprika
- 1 head medium sized radicchio
- 1/2 head chopped romaine lettuce
- 1 6 oz. grilled chicken breast, sliced into bite-sized pieces
- 1 1/2 avocado sliced
- 1 small tomato diced ( about 1/4 cup)
- 1/4 cup thinly sliced red onion
- 1/2 c. crumbled blue cheese
- 3 bacon strips, cooked and crumbled
- 1/4 c. grated carrot
Grilled Chicken and Tortellini Caesar

Early in the day, or even the night before,combine the chicken breasts with the2 tbsp
- 4 chicken breasts, skinless and boneless
- 2 tbsp. (30ml.) olive oil
- 1/4 c. (50ml.) lemon juice
- 1 tsp. (5ml.) garlic salt
- 1 8 oz. package (250g) fresh cheese tortellini, uncooked
- 2 tomatoes, cut into 1/2" cubes
- 1 medium cucumber cut into 1/2" cubes
- 1/2 c. (125ml.) red onion chopped
- 1/4 c. (50ml.) black or green olives, sliced and pitted (optional)
- 1/4 c. (50ml.) grated parmesan cheese
- Slightly Caesar Dressing
- 1/2 c. (125ml.) olive or vegetable oil
- 1/4 c. (50ml.) vinegar
- 1/4 c. (50ml.) mayonnaise
- 1 clove garlic crushed
- 1 tsp. (5ml.) dijon mustard
- 1 tsp. (5ml.) worchestershire sauce
- 1 tbsp. (15ml.) canned anchovies minced
- salt and pepper to taste
Chicken A La Swiss

Serve with rice and your favorite vegetables
- 6 whole, medium sized chicken breasts, boned and skinned
- 1 8 oz. pkg. swiss cheese
- 1 8 oz. pkg. cooked ham
- 3 tbsp. flour
- dash salt, pepper & garlic powder
- 1 egg
- 1/4 c. milk
- 1 c. bread crumbs
- 6 tbsp. butter
- 1/2 c. dry white wine
- 1 chicken bouillon cube
- 1 c. whipping cream
- 1 tbsp. cornstarch
Cranberry Spinach Salad

- 1 package spinach
- 1/2 c. craisins
- red onion slices
- 4 slices bacon cooked crisp and crumbled
- 1/2 c. honey
- 1/2 c. lime juice
- 2 tbsp. dijon mustard
