Easy Scalloped Potatoes

- 1 can (10 oz) cream of mushroom soup
- 1/2 c sour cream
- 1 c cheese whiz
- 1 tsp. black pepper
- 3 lb. (1.5kg) potatoes (about 9), sliced
- 1 large onion, sliced, separated into rings
Pulled Pork with Ginger Bourbon Sauce

Place onion slices in an even layer in slow cooker insert
- 1 medium onion, thinly sliced
- 2 kg. boneless pork shoulder
- 355ml. can ginger ale
- For sauce
- 1 cup apple jelly
- 1 cup ketchup
- 1/2 cup apple cider vinegar
- 1/3 cup bourbon
- 2 tbsp. Worcestershire sauce
- 2 tsp. tabasco sauce
- 1 tsp. garlic powder
- 1/2 tsp. ground ginger
Turkey Bruschetta Panini

HEAT panini grill. FILL bread slices with turkey, cheese, basil and tomatoes
- 2 slices Italian bread
- 4 slices OSCAR MAYER Deli Fresh Cracked Black Pepper Turkey Breast
- 1 KRAFT Mozzarella Cheese Slice
- 2 fresh basil leaves
- 2 thin tomato slices
- 1 Tbsp. KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
Bacon Cheeseburger Casserole

Heat oven to 400F Brown meat with onions in skillet; drain
- 1 lb. lean ground beef
- 1 onion, chopped
- 1/3 cup ketchup
- 2 tbsp. yellow mustard
- 1 cup shredded cheddar cheese
- 8 slices bacon, cooked, crumbled
- 4 cups frozen seasoned shredded potato nuggets
Rhubarb Tart

Heat oven to 425F. Beat butter and 1/3 cup granulated sugar in large bowl with mixer until light and fluffy
- 1/2 cup butter, softened
- 1 cup granulated sugar, divided
- 1 cup flour
- 1 pkg. (250g.) Philadelphia cream cheese, softened
- 1 egg
- 1/2 tsp. vanilla
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/2 lb.(225g.) fresh rhubarb, cut into 1/2" lengths
- 1 tsp. icing sugar
Chicken, Bacon and Avocado Chopped Salad

Combine the lettuce, bacon, chicken,tomatoes,red onion,blue cheese and avocado together in a large mixing bowl
- 1 head romaine lettuce, chopped (about 5-6 cups)
- 4 slices bacon, cooked and diced
- 2 cups diced cooked chicken
- 1 cup halved cherry tomatoes
- 1/2 cup diced red onion
- 4 ounces blue cheese, crumbled
- 1 avocado, peeled, pitted and diced
- 1/4 cup red wine vinaigrette (see recipe below)
- RED WINE VINAIGRETTE INGREDIENTS
- 1/4 cup olive oil
- 3 tbsp. red wine vinegar
- 3 garlic cloves, minced
- 2 tsp. dijon mustard
- 1 tsp. italian seasoning
- pinch of salt and freshly cracked black pepper
Retro Taco Bowl

Heat olive oil in a large skillet over medium high heat
- Chicken:
- 2 tbsp. olive oil
- 1/2 medium red onion, chopped
- 1 tbsp. chili powder
- 1 lb. ground chicken
- 3/4 cup fresh or frozen corn kernels
- Kosher salt and freshly ground pepper
- Dressing:
- 1/2 cup prepared salsa
- 1/2 cup low fat greek yogurt
- Salad:
- 1 heart of romaine, chopped
- 1 15oz. can kidney beans, drained and rinsed
- 2 plum tomatoes, diced
- 1 cup grated pepper jack cheese
- 2 avocados, diced
- 2 cups coarsely crushed tortilla chips for topping
Grasshopper Fudge Cake

- 1 to 350°F 13x9-inch 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
- 2 1 1/2 1 3 directed on box, adding 1 1/2 teaspoons of the mint extract with the water. Reserve 1 cup batter. Stir 3 drops of the green food color into reserved batter; set aside. Pour remaining batter into pan.
- 3 12 to 14 by generous tablespoonfuls randomly in 12 to 14 mounds onto batter in pan. Cut through batters with metal spatula or knife in S-shaped curves in one continuous motion. Turn pan one-fourth turn; repeat cutting for swirled design.
- 4 13x9-inch to 1 on box for 13x9-inch pan. Run knife around sides of pan to loosen cake. Cool completely, about 1 hour.
Lasagna Soup

Spray large heavy bottomed saucepan or dutch oven lightly with cooking spray
- 1 lb. (454g) extra lean ground beef
- 1 box (900ml.) beef broth
- 1 can (284ml.) condensed tomato with basil and oregano soup
- 2 cups water (500ml.)
- 2 cloves garlic, finely chopped
- 1 1/2 tsp. (7ml.) dried oregano leaves, crushed
- 1/2 tsp. (2ml.) ground black pepper
- 1 cup (250ml.) diced fresh tomato
- 2 cups (500ml.) whole wheat short lasagna noodle shaped pasta
- 3 tbsp. (45ml.) shredded parmesan cheese

- 1 box Pillsbury refrigerated pie crusts, softened as directed on box
- 1 3/4 cups fresh blueberries
- 4 tbsp. sugar
- 1 tbsp. cornstarch
- 1/3 cup all purpose flour
- 1/4 cup shredded coconut
- 3 tbsp. butter, softened
