Southwest Chicken and Ranch Salad
- 6 cups loosely packed torn romaine lettuce
- 2 cups chopped cooked chicken
- 1 can (15oz) black beans, rinsed
- 1 avocado, sliced
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup salsa
- 1/2 cup ranch dressing
- 1 cup coarsely broken tortilla chips
Preparation time 15mins
Cooking time 15mins
Toss lettuce with chicken, beans, avocados and cheese in a large bowl.
Mix salsa and dressing until blended. Add to salad just before serving; mix lightly.
Top with chips.
