Beat butter and cream cheese at medium speed with an electric mixer until creamy
- 1 1/2 cups butter, softened
- 1 (8-ounce) package cream cheese, softened
- 3 cups sugar
- 6 large eggs
- 3 cups all-purpose flour

- 1/4 cup bourbon
- 1 1/2 teaspoons vanilla extract

To make Chiles Rellenos: Roast and peel chiles
- Chiles Rellenos
- 6 large poblano chiles
- 2 tsp. vegetable oil
- 1/2 medium onion, chopped (1 cup)
- 1 medium zucchini, chopped (1 cup)
- 1/2 cup fresh or frozen corn kernels
- 1 cup shredded low-fat Cheddar or Monterey Jack cheese
- 1 large egg
- 1 cup panko breadcrumbs
- 1/4 cup chopped cilantro
- 1 lime, cut into 6 wedges
- 1/4 cup low-fat sour cream or plain yogurt
- Sauce
- 2 tsp. vegetable oil
- 1/2 medium onion, chopped (1 cup)
- 2 tsp. chili powder
- 1 tsp. ground cumin
