Very good recipe to use ripe bananas
- 1 stick butter or margarine softened 1/2 cup or 4ounces
- 1 1/2 cups granulated sugar
- 2 large ripe bananas peeled and mashed
- 1/2 cup firmly paced unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 4 eggs
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup sour cream
- Chocolate streusel filling
- 4 teaspoons butter melted and cooled
- 1/2 cup packed brown sugar
- 1/2 cup flour 6 ounces semisweet chocolate chips 1 cup
- 1 cup chopped pecans
- 1/2 teaspoon ground allspice
- Powder sugar
Muchroom & Swiss Burger

- 1 lb Groundbeef,
- 1 15 oz can Cream of muchroom soup
- 1 24 oz Bag Potato dumplings mini ( I make my own )
- 2 Tablespoons Oil
- 1 8 oz bag sliced muchrooms
- 6 Cloves Garlic sliced
- 1 onion
- 1/4 cup Worcester sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 Tablespoons Butter
- 1 cup Heavy Whipping Cream
- 2 cups Swiss cheese
Chocolate Pear Cake

- 4 large pears
- 1 1/4 cups + 4 Tablespoons
- 1/2 cup cocoa
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
- 1/2 cup + 4 Tablespoons Greek yogurt
- 2 Tablespoons milk
- 2 eggs
- 4 egg yolks
- 1 1/2 cups sugar
- 1/2 cup + 2 Tablespoons vegetable oil
- 1/2 cup Mimi chocolate cups dark
Colorado Green Chili (Chili Verde)

1. Combine pork, ½ cup water, and ½ teaspoon salt in Dutch oven over medium heat
- 3 pounds boneless pork butt roast, trimmed and cut into 1-inch pieces
- Salt
- 2 pounds (10 to 12) Anaheim chiles, stemmed, halved lengthwise, and seeded
- 3 jalapeño chiles
- 1 (14.5-ounce) can diced tomatoes
- 1 tablespoon vegetable oil
- 2 onions, chopped fine
- 8 garlic cloves, minced
- 1 tablespoon ground cumin
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- Cayenne pepper
- Lime wedges
Chipotle Chicken Taco Salad

To prepare dressing, combine first 7 ingredients, stirring well
- Dressing:
- 1/3 cup chopped fresh cilantro
- 2/3 cup light sour cream
- 1 tablespoon minced chipotle chile, canned in adobo sauce
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 teaspoons fresh lime juice
- 1/4 teaspoon salt
- Salad:
- 4 cups shredded romaine lettuce
- 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
- 1 cup cherry tomatoes, halved
- 1/2 cup diced peeled avocado
- 1/3 cup thinly vertically sliced red onion
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (8 3/4-ounce) can no-salt-added whole-kernel corn, rinsed and drained
Cheesy Zucchini Rice

Heat the olive oil in a medium sauce pan over medium heat
- 1 tablespoon olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons butter
- 1 medium or 2 small zucchini, grated (I used my food processor but a cheese grater would work well, too)
- 1 cup shredded sharp cheddar
- 1/2 teaspoon garlic powder
- salt and pepper, to taste
- splash of milk, as needed
Charred Chili Relleno with Green Rice

Preheat broiler or grill pan to high
- 4 cups chicken or vegetable stock, divided
- 1 bay leaf
- 2 cups white rice
- 4 large poblano peppers
- 6 ears corn on the cob or 3 cups frozen corn kernels
- 3 tablespoons corn, peanut or vegetable oil, divided
- 1 red onion, chopped
- 1 jalapeno, seeded and chopped
- 4 cloves garlic, chopped
- 1 (15-ounce) can fire roasted diced tomatoes, drained well
- 1 1/2 teaspoons ground cumin, 1/2 palm full
- 1/2 teaspoon dried oregano, eyeball it in your palm
- Salt and freshly ground black pepper
- 1/2 cup fresh cilantro leaves
- 1/2 pound spinach leaves, deveined and coarsely chopped
- 4 scallions, coarsely chopped
- 2 limes, zested, juiced
- 1 cup shredded Chihuahua cheese, Asadero or Monterey Jack

Blend together melted butter, sour cream, and egg
- 1 stick butter, melted
- 1 cup sour cream
- 1 box Jiffy corn bread mix
- 1 can regular corn
- 1 can creamed corn
- 1 beaten egg
- toppings: bacon, scallions, and/or French fried onions
Chocolate Bonbon Pops

In large food processor bowl combine cookies and 3/4 cup of the nuts; pulse until cookies are crushed
- 18 chocolate sandwich cookies with cream filling
- 1 1/2 cups pecans, toasted
- 2 tablespoons orange liqueur or orange juice
- 1 tablespoon light color corn syrup
- 2 tablespoons unsweetened cocoa powder
- 20 lollipop sticks
- 1 12 ounce package milk chocolate or semisweet chocolate pieces
- 1 tablespoon shortening
Spicy Chicken Tortilla Roll-Ups

Season the chicken breasts with salt, half of the cumin, and 1 tsp of the chili powder
- 1.5 lbs boneless, skinless chicken breasts
- 1 can Ro-tel diced tomatoes, drained
- 12 oz cream cheese, softened
- 1 cup shredded cheddar or monterey jack cheese
- 1 clove garlic, minced
- 3 tsp ancho chili powder
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic salt (I like Lawry's)
- 1/4 cup cilantro, chopped
- 6 scallions, white and green parts, chopped
- 6-8 large flour tortillas
