Crab-Stuffed Haddock

Preheat your oven to 375 degrees
- 4 - 4 oz haddock fillets, cut 1" thick ( we used Halibut)
- 6 oz can white crab meat, drained
- 4 The Laughing Cow Light Garlic and Herb Wedges
- 1/2 cup whole wheat bread crumbs ( I could not find any, so I used Italian bread crumbs)
- Pinch red pepper flakes
- Paprika, sea salt and ground pepper, to taste
Panko Crusted Oven Fried Haddock

Oven baked and nice and crispy
- 1 1/2 pounds haddock filets (or any white fish )
- salt and freshly ground pepper
- 1/4 cup all-purpose flour
- 1 1/2 cups panko bread crumbs
- 3 tablespoons finely chopped parsley
- 2 large eggs
- 1 1/2 teaspoons Creole or Cajun seasoning
- 3 tablespoons mayonnaise
- lemon wedges, for serving

- 2 T lemon dill sauce
- 12 oz asparagus (3/4 bunch), trimmed

Wipe fillets with a damp cloth; cut into serving size pieces
- 1 1/2 lbs. fresh haddock or other skinless fillets
- 1/3 c milk
- 1 tsp salt
- 1/8 tsp pepper
- 3/4 c crushed cornflakes (3 c cereal)
- 2 tbsp butter or margarine, melted
