The thickness and marbling of boneless short ribs can vary a good deal
- 2 1/2 - 3 pounds boneless beef short ribs 1 1/2 to 2 inches thick, 2 inches wide, and 4 to 5 inches long, trimmed
- Kosher salt and pepper
- 1 1/2 cups wood chips
- 1/2 cup finely chopped red bell pepper
- 1/3 cup finely chopped red onion
- 1/4 cup extra-virgin olive oil
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin

KOREAN FRIED CHICKEN WINGS WITH SWEET GARLIC SAUCE

In a small sauce pan, add all ingredients for sweet garlic sauce
- Sweet Garlic Sauce:
- 2 Tbs. Finely chopped garlic
- 3 Tbs. soy sauce
- 3 Tbs. Sugar
- 1/3 cup Mirin
- Fried Wings:
- 6 Full chicken wings, removed wingtips, split at joint
- 3/4 cup and 3 Tbs. Tempura Powder

- 4 cups white vinegar
- 20 garlic cloves, peeled and coarsely chopped

- 6 oz tomato paste
- 1 cup balsamic vinegar

- 1/4 cup brown sugar
- 1/4 cup molasses
- 1/4 cup honey
- 1 tablespoon and 1 teaspoon dry mustard powder
