Scalloped Shrimp and Potatoes

Shrimp and spinach take the flavors up a notch in our cheesy potato main dish.

Ingredients

  • 1 pkg. (4.9 oz) scalloped potatoes
  • 2 1/4 cup water
  • 1/3 cup 2% milk
  • 1 lb. peeled and deveined cooked medium shrimp
  • 3 cups fresh baby spinach, coarsely chopped
  • 1 cup shredded colby-monterey jack cheese

Preparation

Step 1

In a large skillet, combine the potatoes, contents of sauce mix, water and milk. Bring to a boil. Reduce heat; cover and simmer for 8-10 mins. or until potatoes are tender, stirring occasionally.

Add shrimp and spinach. Cook and stir until spinach is wilted. Stir in cheese until melted.
