Scalloped Shrimp and Potatoes

Ingredients
- 1 pkg. (4.9 oz) scalloped potatoes
- 2 1/4 cup water
- 1/3 cup 2% milk
- 1 lb. peeled and deveined cooked medium shrimp
- 3 cups fresh baby spinach, coarsely chopped
- 1 cup shredded colby-monterey jack cheese

Preparation
Step 1
In a large skillet, combine the potatoes, contents of sauce mix, water and milk. Bring to a boil. Reduce heat; cover and simmer for 8-10 mins. or until potatoes are tender, stirring occasionally.
Add shrimp and spinach. Cook and stir until spinach is wilted. Stir in cheese until melted.
